Curry Chicken Salad for Everyday
When we say everyday we honestly mean it. Making our curry chicken salad recipe is always on our rotation and it just doesn’t get old. What keeps us from eating this curried chicken salad almost everyday is that we sometimes forget to buy chicken to make this!

Everyday Curry Chicken Salad – Better than the deli
Eating our flavorful curry chicken salad almost everyday of the week isn’t an exaggeration. We make it so flavorful with seasonings and texture that it’s hard to be bored by it. A while back we bought some curry chicken salad from the deli case at one of our markets. It was bland, bland and pasty on top of pasty. Yuck. It’s shocking to see how someone can truly screw up such a simple dish. So we started making it ourselves and we will never turn back to the deli case. This recipe is so easy, there’s no reason to not make it!
Different Ways to Enjoy this Dish
To further explain why we can eat it everyday is because there’s different ways to eat chicken salad. It’s literally a dish with unlimited possibilities and with the right pairing, chicken salad tastes like a new dish everytime we make it.
- As a green salad. So the obvious and healthiest version is eating it on a fresh bed of lettuce or greens. You don’t even need a salad dressing because the chicken salad is so flavorful already.
- Side dish or “dip”. Serve it as you would an appetizer with a side of vegetables or crackers. We love cutting slices of cucumber for a lower carb option. And the world of crackers are unlimited so every cracker paired with the chicken salad is like a new dish every time.
- Make it a sandwich or bagel: just stuff the chicken between the bread and you have a fantastic sandwich for lunch.
- Wrap it. If you have some tortillas, flatbread or any type of wrap, then you’re halfway there to a great curry chicken salad wrap. Add some lettuce, chopped cucumbers and tomato.

Easy Ways to Prepare the Chicken
The thought of having to start from scratch and cook chicken just for curry chicken salad can be daunting. Here’s some ideas to make assembling this recipe quicker and sometimes, more budget friendly:
- Buy a roast chicken for dinner. Then the leftovers are perfect for this recipe.
- Store bought pre-cooked chicken in the deli. We’ve seem some markets that have pre-cooked chicken breast. That’s a quick and simple way to get your hands on some chicken.
- Canned chicken: ok, now wait before we judge here. We never understood the world of canned chicken until we tried it. There was an organic canned chicken product that someone gave us. We had no idea what we were in for. When we tasted it we were blown away at how delicious (and flavorful, well seasoned) the chicken was. This is a great product for camping.
- Leftover fried chicken is a perfect option.
Curry Chicken Salad
Ingredients
- 1 cup (140 g) cooked chicken , chopped or torn
- 1/4 cup (25 g) celery , chopped
- 2 green onions , chopped
- 2 Tablespoons (30 ml) fresh cilantro , minced
- 2 Tablespoons (30 ml) chopped dried fruit , such as apricots, raisins, cranberries, pitted dates
- 1/4 cup (60 g) mayo Greek yogurt or sour cream
- 2 teaspoons (10 ml) curry powder
- 1/2 teaspoon (2.5 ml) ground cumin
- 2 teaspoons (10 ml) lime juice
- 1 teaspoon (5 ml) soy sauce , or tamari for gluten free
- 1/4 teaspoon (1.25 ml) salt , or to taste
- fresh ground black pepper , to taste
Instructions
- Cut or tear the chicken into bite sized pieces. We usually like them about 1/2”-3/4” in size, but make it to your preference.
- Chop the celery, green onions and cilantro into small pieces.
- Cut the dried fruit into small bite sized pieces if needed. (Usually raisins & cranberries we’ll leave whole unless they are big, but we’ll always cut up the apricots and dates.)
- In a bowl combine the 1 cup of chicken, 1/4 cup of celery, chopped green onions, 2 Tablespoons chopped cilantro, 2 Tablespoons chopped dried fruit of choice, 1/4 cup mayo (or Greek yogurt or sour cream), 2 teaspoons curry powder, 1/2 teaspoon cumin, 2 teaspoons lime juice, 1 teaspoon soy sauce, and salt and pepper to taste.
- Gently stir everything all together until it is all evenly coated with the , mayo, spices and other seasonings.
- Enjoy at room temperature, or if you prefer, chill for about 30 minutes before serving. It’s great with lettuce, in a sandwich or wrap, or as an appetizer with cracker or chips.
