We were craving something warm and savory for breakfast and had some leftover croissants from Costco. This is always a good thing. Having leftover croissants, eggs, some cheese and a little ham. Croissant egg boats are born within a few minutes and they are so good! We made them again for a breakfast photoshoot and everyone devoured them in minutes.

Breakfast Croissant Egg Boats Toppings

Now these stuffed savory croissant stuffed eggs are so easy, there’s really not much you can do to screw it up. Even if something went wrong, like adding too much cheese or filling these croissants still come out of the oven delicious. Costco croissants are great for these. They might not be pretty, but they’re delicious. Here’s some topping ideas beyond the egg:

Croissant Egg Boats

Croissants vary so much in size. We used the large Costco size croissants, which were able to fit 1 large egg. Some eggs are too large for a croissant. Or if you’re using mini croissants, then one whole egg will not fit. You can just crack a few eggs in a bowl, season with salt and pepper then fill each croissant half with the egg mix. If you need more eggs, then crack one more. Using an egg mix will save you a few eggs. Also, to save eggs, you don’t have to fill each croissant all the way to the top with eggs.

Ingredients

  • about 6 croissants (large Costco size) 
  • 5-6 large eggs
  • 2 cups (224 g) shredded cheese
  • 1 cup (113 g) diced cooked ham , or cooked bacon bits
  • salt and pepper , to personal taste
  • 3 Tablespoons (45 ml) minced parsley
  • hot sauce , optional

Instructions 

  • Preheat oven to 325°F/160°C. Lay parchment or foil on baking sheet.

  • Slice the top of the croissant lengthwise. Gently open the croissant and press inside to create a boat to hold the fillings.

  • Add a light layer of cheese in the croissant bottom. Fill the croissant with egg and season with salt and pepper. Choose your method of egg-type to fill the croissant (whole or beaten). Our notes are above in the summary.

  • Top with additional cheese, diced cooked ham or cooked bacon

  • Bake at 325°F/160°C for about 25 minutes or until eggs are cooked through. Top with minced parsley and enjoy! We love it with hot sauce.

Can you freeze leftover croissant egg boats

We tested these frozen, then thawed. The results were still great! If you have a few leftover and need a quick breakfast, then sure freezing them is ok. But we recommend taking them out to thaw first in the fridge. That way when you’re ready to eat the next day, pop them in the air fryer or oven at 350F for about 10 minutes.

Different Croissant Shapes

We tested these on the Costco straight shaped croissants and they’re perfect for stuffing. The popular crescent shaped croissants are great too. We suggest using the larger croissants so there’s more room to hold the eggs. Then you can cut them in half for serving if anyone wants a smaller portion. Small tiny bite sized croissants aren’t thick enough for holding eggs. Hope you enjoy these croissant stuffed eggs!
