Oh, we have so much work on our hands this week. The storms took down some big trees at the cabin and there’s so much land clearing work to be done. After that comes all the de-limbing and bucking of the huge cedar and spruce trees. But you know we love to eat good and add chili crisp on everything. So we made another avocado toast with chili crisp eggs and filmed it. There’s also a video showing the trees that fell, meaning all the work we have in-store for us this season!

Video: Fallen Trees and All the Work to be Done

So it’s been a pretty stormy winter in Northern California and our cabin has definitely had it’s share of downed trees. It wasn’t as bad as snowmageddon 2023 but there’s enough fallen trees to keep us busy this spring. Here’s a little video of what the trees look like and all the future firewood we’ll have ready for Winter 2025. We’ve been eating the avocado toast with chili crisp eggs for protein and energy. We need it for sure!

Chili Garlic Crunch (Chili Crisp) Fried Eggs on Avocado Toast

You can use homemade chili crunch or store bought (also often called also often called chili crisp, chili garlic crunch, or similar variations). The level of spice will vary a lot between different brands of chili crunch. For the chili crunch fried eggs, make sure to adjust amount of chili crunch based on the spiciness the one you are using and to your taste.
Some chili crisps have less oil than others. If you are using the drier style of chili crunch, add a little extra oil or butter to the pan before frying the eggs.
Be ready to immediately add the egg to the pan after putting the chili crunch in. You don’t want the chili crunch to burn or else it will become bitter and the air will be like mace.

Ingredients

For Chili Crunch Fried Eggs

  • 1 Tablespoon (15 ml) chili crunch with some of the oil
  • 1 teaspoon (5 ml) extra oil or butter , if needed (optional)
  • 2 large eggs

For Avocado Toast

  • 2 slices toasted bread
  • 2 Tablespoons pate , optional
  • 1 small avocado , ripened to your liking

For Homemade Chili Crunch (makes about 1/2 cup)

  • 1/2 cup (120 ml) oil
  • 6 cloves fresh garlic , minced or sliced
  • 2 Tablespoons (30 ml) red chili flakes
  • 2 Tablespoons (30 ml) dried minced garlic
  • 2 Tablespoons (30 ml) dried chopped onion
  • 2 teaspoons (10 ml) sugar , or to taste
  • 1 teaspoon (5 ml) toasted sesame seeds
  • 1 teaspoon (5 ml) kosher salt , if using table salt, use a little less
  • 1 teaspoon (5 ml) smoked paprika
  • 1 teaspoon (5 ml) cayenne (optional to taste)
  • 2 teaspoons (10 ml) soy sauce

Instructions 

Prep Avocado Toast

  • Toast the bread to your liking. If you like, spread some pate on the toasted bread.
  • Cut the avocado into slices or scoop out chunks. (This is how we often slice – cut the avocado in half lengthwise. Twist the halves apart. Cut the halves again lengthwise to make quarters and twist to separate. Now remove the seed from the quarter which has the seed. Slice the avocado into your preferred thickness of slices, trying not to cut through the skin. Then peel the skin away.)

Chili Garlic Crunch Fried Egg Instructions

  • Heat a saute pan on medium-high heat. If your chili crunch is the drier style add the 1 teaspoon (5ml) of oil or butter to the pan then add the 1 Tablespoon (15ml) of chili crunch, otherwise just add the chili crunch with its oil to the pan.

  • As soon as you have added the chili crunch to the pan, immediately crack the eggs on over the top. If you wait too long to add the eggs, the chili oil aromatics will burn and will be like mace. If the chili crunch overheats and smokes, turn on your vent hood or fan for good ventilation. Or open up your windows.
    Prep tip: you can always crack the eggs ahead of time, each in their own individual bowl. It is a little more clean up, but less rushed when cooking and you don’t have to worry about stray egg shells getting into the pan.

  • As eggs are cooking, spoon some of the hot chili crunch and oil that is in the pan over the eggs so the chili crunch can cook into the top.

  • Fry the eggs until edges are crispy and center whites are set. If you want the eggs to set faster, cover with a lid when able to while cooking.
  • Top the toast with the avocado, then top with the chili crunch fried egg. Add extra chili crunch if desired.

Homemade Chili Garlic Crunch Instructions (Batch Instructions)

  • Mince or slice the garlic to your preferred size (it doesn't really matter how big or small it is, just how much of a garlic bite you want).

  • Heat the 1/2 cup (120ml) of oil in a pan over medium heat. Add garlic and cook about 1 minute or until lightly golden.

  • Immediately remove from heat (the garlic will continue to cook a little in the pan. You want it to be just a light golden brown. Don't let the garlic burn or else it will become bitter).

  • Stir in rest of the ingredients (2 Tablespoons (30ml) red chili flakes, 2 Tablespoons (30ml) dried minced garlic, 2 Tablespoons (30ml) dried chopped onion, 2 teaspoons (10ml) sugar, 1 teaspoon (5ml) toasted sesame seeds, 1 teaspoon (5ml) salt, 1 teaspoon (5ml) smoked paprika, 1 teaspoon (5ml) optional cayenne, and 2 teaspoons (10ml) of soy sauce).

  • Taste for flavor and adjust to your liking. Cool completely. After cooled, store in a mason jar or similar. Stir well before using.
