Tips on Making Salisbury Steak Recipe with Mushroom Gravy
- Avoid tough patties: When mixing all ingredients together and shape the patties but don’t press them too firm. You want to have loosly packed patties so that they don’t end up like tough hockey pucks. Make sure to give them a good sear.
- Save all the crispy tidbits from the cooking the patties for the gravy. These savory tidbits makeds the gravy really flavorful.
- Make sure to cook the mushrooms down to where they release all their moisture. When the mushrooms are cooked to be slightly crisp, the flavor is outstanding.
- If you don’t like mushrooms you can just use the onions.
- Usually Salisbury steaks are served with mashed potatoes but we love roast potatoes. Or to mix things up you can serve the steaks on rice and noodles.

- If you love pork, then using ground pork is great. The rich flavors are fantastic.
- Fan of ground lamb meat? This option is equally delicious.
- Using plant based beyond meat or impossible meat for a vegan Salisbury steak patty is wonderful. For the gravy, use vegan or vegetable stock and you’ve got a delicious plant based Salisbury steak.

For The Mushroom Gravy

- 1 medium onion , sliced
- 3 Tablespoons (42 g) butter
- 2 cloves garlic , minced or crushed
- 1/4-1/2 cup (30 g) flour , depending on how thick you like your gravy
- 3 cups (710 ml) broth (beef, chicken or vegetable)
- kosher salt , to taste
- black pepper , to taste
Instructions
Make Salisbury Steak Patties
- In large bowl mix together all the beef patty ingredients (1 pound ground beef, 1/4 cup breadcrumbs, 1 egg, 1 Tablespoon Worcestershire sauce, 1 teaspoon onion powder, 1/2 teaspoon garlic powder, 1/2 teaspoon salt, and black pepper to taste).
- Shape into about 5 patties. Try not to over-handle them too much and compress them a lot. A looser packed meat will make a more tender patty.
- Heat large pan over medium-high heat and then add oil. Add the patties and if they are a little thick, smash them to your preference. Brown both sides of patties (about 1-2 minutes per side) and then remove from the pan (they shouldn’t be fully cooked yet, you’ll cook them in the gravy for 5-10 minutes later).
Make Mushroom & Onion Gravy
- Keeping the same pan and beef juices over medium-high heat, add the sliced mushrooms and onion.
- Cook the mushrooms and onions, stirring occasionally, until onions are golden and excess mushroom liquid evaporates, about 10 minutes.
- Spread the mushrooms and onions so there is an empty circle in the middle of the pan. Add the 3 Tablespoons of butter and minced garlic to the empty circle in the middle of the mushrooms and onions. Cook for about 1 minute.
- Whisk in the 1/4 – 1/2 cup of flour, cooking and whisking to remove lumps. Add about 1 cup of beef broth, whisking until incorporated. Stir everything all together.
- Increase heat to High. Slowly pour in the remaining 2 cups of broth and whisk until well combined. Season with salt and pepper, to taste (the saltiness and flavors will concentrate some when it reduces down).
- Once gravy starts to boil, reduce heat to low. Stirring often, simmer until the gravy starts to thicken, about 5-10 minutes.
Combine & Serve
- Add seared beef patties back into the gravy and cook until the patties are cooked to your preferred doneness (usually about 5-10 minutes), stirring the gravy occasionally around the steaks. Taste for seasoning and add more salt & pepper, if desired.
- Serve the patties topped with the mushroom sauce. They are excellent over potatoes (mashed, smashed or roasted), rice, or pasta!

Can you make salisbury steaks ahead of time?
We love meal prepping salisbury steaks! These steak patties are perfect for meal prep. You can make the whole recipe ahead of time. But when the patties are cooked, remove them from the gravy and allow them to cool. Then freeze the patties separately. You can freeze the gravy too. But when it thaws, it might be too watered down. Allow it to heat up and stir it really well to break up all the clumps. Add a little bit of heavy cream or butter to thicken it a bit.
Can You Freeze Salisbury Steaks?
Yes and it’s a great way to have dinner ready when you get home. Just make sure they are thoroughly cooled before you freeze them. Then freeze them in a freezer safe container. Before serving, take them out the night before and allow them to thaw in the fridge. Re-heat in a pan before serving again.
