Our friend tried this coconut water matcha cloud and declared “oh yum! now I like matcha!”. So was she meaning she hated match, but after trying it with coconut water, she’s now a fan? Well that’s progress and if you’re one of those that was on the matcha fence, then this drink might lead you into the right “matcha direction”.

What is a Matcha Cloud?

A matcha cloud is a frothy foamy topping used for all types of coffee and tea drinks. You take matcha powder and with the addition of water and whisking it, you’ll get a nice silky and foamy topping. But others will replace the water with heavy cream, milk or even coconut milk for a vegan version. This matcha creamy top makes your drink a little bit more decadent and matcha-y. We previously shared a recipe for how to make matcha cream top (cold foam).

Making Iced Coconut Water Matcha Cloud

This viral drink has become popular for so many reasons. It’s not too “matcha-y” for those of you who are new to matcha, which can be a little grassy, bitter or sometimes “seaweed-y” tasting. But the addition of the coconut water is a great balance. This refreshing iced coconut water drink with matcha is super refreshing and actually pretty healthy with all the goodness of coconut water and matcha. It’s the great intro drink to anyone who is interested in exploring the world of matcha drinks.

Customize your sweetness level

This coconut water matcha cloud isn’t too sweet and you can make it as sweet as you want. Start with a touch of powdered sugar (or powdered sugar substitute – we like the monkfruit powdered sweetener), honey, maple syrup or simple syrup. Stir it in the drink and taste. Keep adding a little sweetener at a time until it’s perfect to your personal taste. If you’re interested in learning more about matcha here’s a good article talking about what is matcha.

The sweetener is optional but we like it with a little bit of sweetness to balance the matcha but not overwhelm it. You can use whatever sweetener you prefer (powdered sugar, powdered non-sugar sweetener, maple syrup, agave nectar, or honey). This makes enough to top 1-2 drinks but you can easily scale up the amounts for larger quantities.

Ingredients

  • 1/4 cup (60 ml) coconut milk , or heavy cream
  • 2 teaspoons (8 g) matcha powder
  • 1 teaspoon (5 ml) optional powdered sugar or honey or maple syrup (or to taste)

Equipment

Instructions

Make the Matcha Cloud

  • For best results, start by chilling a bowl or cup in the freezer for about 15 minutes (you don’t have to, but the coconut milk or heavy cream will whip better and quicker if using a chilled vessel). Add the 1/4 cup coconut milk or heavy cream to the bowl or cup.
    adding heavy crema
  • Sift the 2 teaspoons matcha over the coconut milk or heavy cream.
    sifting matcha
  • Add the optional sweetener to your preference.
    adding sweetener
  • Whip with a frother or whisk by hand until the cream thickens and keeps soft peaks (after lifting the frother/whisk out, the cream will hold its lines but the top peaks will be soft and after a second or two will fall back on itself).

For multiple servings use a bowl and whisk (most frothers aren’t strong enough for larger portions)

  • Using a cold bowl and whisk is better for making multiple servings of matcha cream. Whisk the ingredients until the cream starts to stiffen to soft peaks. If using heavy cream, don’t over whisk or else it will become too stiff and you'll lose the creamy texture of the cream. You want it to be able to stir in nicely and not just sit on top like a garnish.
