We love a good cheeseburger. The online food world has been going crazy over the sizzling cheese burgers and it was calling out to us in our sleep. We created our version of this viral burger phenomenon and because it received four enthusiastic thumbs up, we have to share it. If you’re cheese burger lovers like us AND if you love a good cheese sauce, then you’re in for a real treat. Our sizzling cheeseburgers recipe is a cheeseburger lovers dream come true.

What are Sizzling Cheeseburgers? 

We have to give Japan the credit for these. It’s basically a cheese burger that’s served on a hot plate with a sizzling, melted cheese sauce. American Diner ANDRA in Tokyo Japan started it all with a decadent cheeseburger swimming in a sizzling hot plate of melted cheese, similar to a light cheesy bechamel sauce. Why is it called American Diner? Because this burger joint is an American Football themed spot with American Football team jerseys adorning the walls and the games played on their tv. They’re known for their smash burgers but their Touchdown Sizzling Cheese Burger is all the rage and created a slew of copycat dishes around the world. The sizzling cheese burger is the IT burger of the moment and deservedly so.

Sizzling Cheeseburgers

To get that “sizzling” cheese effect, you need the right pan. We discuss this in detail in our article. The fish sauce is optional, as it’s been part of our popular Umami Burger recipe for over a decade and makes the burger patties super delicious!
We prefer to grate the cheese from a block because this ensures that the cheese sauce will be smooth and not gummy. Pre-shredded cheese is often coated with a powder that will cause the sauce to be gummy and waxy.

Ingredients

For the Cheese Sauce

  • 1/4 cup (57 g) butter
  • 1/4 cup (30 g) all-purpose flour
  • 2 cups (480 ml) milk
  • 1 teaspoon (5 ml) garlic powder
  • 1 1/2 cups (170 g) freshly grated cheddar cheese
  • 1/4 cup (28 g) freshly grated mozzarella cheese
  • 1/4 cup (25 g) parmesan cheese
  • salt , to personal taste

For the Cheese Burgers

  • 2 pounds (907 g) ground beef
  • 1 1/2 Tablespoons (22-30 ml) fish sauce , (for more daring, savory depth, use 2 tablespoons)
  • 2 cloves garlic , minced (or 1 teaspoon garlic powder)
  • fresh ground black pepper and salt , to personal taste
  • 1 onion , sliced (optional)
  • 4 hamburger buns (preferably brioche buns)
  • condiments of choice , pickles, burger sauce, ketchup, mustard

Make the Cheese Sauce

  • Heat pot to medium/high heat. Melt the 1/4 cup of butter then add 1/4 cup of flour. Whisk until no flour clumps remain.

  • Add 2 cups milk and continue whisking then add the 1 teaspoon garlic powder.

  • Add all the 3 cheeses (2 cups total) and continue to whisk until cheese sauce is smooth. Taste it and add salt if needed.

  • If the cheese sauce is too thin, you can always add more cheese later or wait until you’re ready to serve it. The cheese sauce should be on the thinner side. 
    As you’re making the burgers, the cheese sauce will cool and will become more thick. When you’re ready to serve the cheese sauce that’s when you can decide if you need to add more cheese to thicken it or more milk to thin it out.

Make the Cheeseburgers

  • In a bowl, combine 2 lbs. ground beef, 1 1/2 – 2 Tablespoons fish sauce, minced garlic, and black pepper to taste. Mix together well. Form the meat into 8 balls.

  • Heat large skillet or flattop to high heat. Place balls of meat on skillet and smash down. If you like your burgers super-seasoned, sprinkle a bit of flaky salt and additional black pepper on the formed patties.

  • While patties are cooking, you can cook the onions at the same time if you want grilled onions.

  • Cook the patties for about 1-2 minutes and flip.

  • Add a slice of cheese on top of each patty. Continue for another 1-2 minutes or to your preferred doneness. Place buns cut side down to toast them while the burger patties cook.

  • Assemble the burgers: Add some burger sauce or your sauce of choice on bun, then top with two layers of patties. Top with your choice of condiments like the onions and/or pickles, etc.

  • Cut the burgers in half. Set aside.

  • Heat the sizzle pan (or whatever pan you are going to serve the burger in) on medium-high heat until it starts to smoke. It needs should be nice and hot.

What Does Applebee’s O-M-Cheese Burger Taste like? Similar to Sizzling Cheese Burger?

The concept is similar, but the burgers are different. Applebees just released their version of the sizzling burger called the O-M-Cheese Burger but it has bacon, a single thicker patty, fries and other ingredients that can rival the original American Diner burger. Also, their cheese is more like a queso. Either way, all these burgers share the same love of a cheese bath for their burgers. If you’re in India, you can even find it at Pepper Town India and in Singapore there is Swensen’s in Singapore which has their version. 

Pan Tips for the Sizzling Cheese Sauce 

The piping hot sizzling cheese sauce is visually stimulating for both the mind and the appetite.  But re-creating at home can be a doozy if you’re not prepared when making our sizzling cheeseburgers recipe. You have to use the right pan and the timing has to be perfect so that you don’t burn the cheese or watch it go flat. 

  • You need to pre-heat the pan to be piping, smoking hot in order to get the cheese to sizzle. 
  • Ideally a cast iron fajita pan or sizzle plate is the perfect size. 
  • Even a small cast iron pan or small skillet is great. 
  • Don’t use a ceramic baking dish for these cheese burgers because most you can’t heat it on the stove top without the possibility of it cracking.
