You can use mediocre tomatoes, roast them down to it’s purest tomato flavor, jar the tomatoes and you’ll have a superb stash of tomato sauce for anything you need to make. Roasted Tomato Sauce Recipe with Garlic

- Pre-heat oven to 425°F (220°C). If you have a Roast function on your oven, go ahead and use that mode. Just make sure to adjust cooking times to less. Roast the tomatoes to your preferred darkness.
- Lay parchment paper on sheet pan and place all tomatoes cut side up. Add garlic. Coat the tomatoes and garlic with salt and pepper. Drizzle olive oil on top of tomatoes and garlic.
- Roast tomatoes for about 25-30 minutes, or until the tomatoes are roasted and slightly brown or charred on edges. Allow to cool.
- At this point you can use the roast tomatoes halves as a side dish (great alongside scrambled eggs or as appetizers on grilled bread) or jar the tomatoes like this in large chunks or blend the tomatoes and garlic very quickly to your desired texture. Add the tomato sauce to jars and follow these sterilization guidelines.
- Use the sauce for pasta, pizza, soups and more.

OMG amazing!!! I just got tomatoes yesterday from a local farmer and made it today. I loved the tomates fresh out of the oven. I lightly blended them and I have a quart jar of this sauce. I am thinking next week’s farm order will be for 5 times the amount I got yesterday. I am going to make this as long as I can get local tomatoes to freeze. I would not recommend canning this in a water bath though since tomatoes can be tricky with regards to the acidity level. I would suggest checking with a local extension office first. It is safe to freeze though.
So glad you love it as much as we do. Great advice about the canning too. We will freeze some batches too. When it first thaws, the texture might change a bit, but if you blend them up after thawing it is just fine. Happy cooking!

how to you can them?
Do u have to “can” them or do u just blend them & then seal them in thejars?
We’ve done them both ways, but we always store them in the fridge. We’ve never stored them at room temp before so not sure exactly how long they would last without spoiling.
How long can you keep the sauce?
We’ve kept the sauce for up to a week in the fridge. Enjoy!
We can about 500 quarts of tomato products per year, so doing it on cookie sheets doesn’t work as well. Just a hint that for those who do large quantities, filling a large roaster with garlic, herbs, onion tops, peppers etc and then halved tomatoes and popping it in a low heat oven til they are all roasted and caramelized works really really well also. I do overnight on 180-250 and the smell is divine. Then you can can 10-20 quart batches and get the same flavor. We are so obsessed with roasted sauce we don’t do any other sauces or pastes any more. ๐
This looks amazing and delicious. I am new to learning on how to prep food from scratch. Could you please tell me, how long do I have to have the jars in a waterbath and then how long does this sauce hold on a shelf? Or do I have to freeze it? Thanks.
I to have made this recipe but added fresh herbs and froze the tomato sauce instead. Very good especially when having a lot of Roma tomatoes.
