Mango Salsa Recipe & Garden Roses Haircut
As promised, “Voila!” the mango salsa recipe that toppled over our teriyaki burger post a few days ago. And we’re thrilled that we actually wrote about it, as promised, considering how behind we’ve been on everything else! The office is a mess, the bathrooms need cleaning and we have 2 other projects behind schedule, but at least we wrote out the mango salsa recipe!
Mango Salsa Recipe

Those teriyaki burgers were extra special we wanted a fruity accompaniment to the homemade teriyaki sauce that coated the patties. Mango salsa is just bitchen. Fresh, fruity, tangy, sweet and sour (if extra lime added) brings out the flavor of almost any burger. Definitely try the mango salsa on some grilled meat dishes or even as a side dish. It’s pretty, colorful, healthy, fresh and sure to please even the pickiest of eaters. One of the favorite staff meals I (Todd) came up with for my crew where I used to manage was a pizza laden with mango salsa, chipotle, roasted potato slices, and smoked gouda cheese. Soooo good!
Our mango tree is settling in nicely with new flowers and hopefully, a ton of fruit this year! If it’s another good year, we’ll be swimming in more fresh mango salsa. But until then, we’ve still been lucky to find some great, juicy and sweet mangoes at our local Asian market.

As another promise, we told some twitter friends that we’d share some pictures of our favorite roses: our climbing eden rose. A conversation over twitter a few weeks ago led to fun geek-out rose talk with fellow twitter peeps and nice comments came to our little rose post.

Fresh Cut!
Mango Salsa Recipe
Ingredients
- 1 large Mango , cut into 1/4" dice
- 1 Roma Tomato , seeds removed and cut into 1/4" dice
- 1 Tablespoon chopped Cilantro , or more to taste
- 2 teaspoons fresh Lime Juice
- pinch Sea Salt , or more to taste
- 1 Tablespoon sliced Green Onions ~ optional
- finely diced chilies ~ optional
Instructions
- Combine all ingredients together (mango, tomatoes, cilantro, lime juice, salt, optional green onions, and optional chilies) and gently mix. Adjust individual ingredients to taste.
- Store covered in fridge until ready to use. Keeps about 3-4 days.
This is such a beautiful dedication! It’s so beautiful how the roses wane left and appear to rest downward.
I’m stunned when looking at the picture (Fresh Cut) on the right. Those roses were thriving and growing so beautiful in your garden. You know what? I always secretly wish my husband send me 99 roses. If I could grow these beautiful roses in my backyard, I would be no longer in “emptiness”, lol.

Oh. my. heavens. That comment applies to both the salsa AND the roses! I have several rose bushes in my garden but nothing, I mean nothing like yours – boy howdy, those are just beautiful! The salsa looks pretty terrific too – wish I were coming to the workshop in CO so I could learn to take pics like you guys – perfection!

I am always so envious of everyone’s garden out in Southern California! The flowers and plants are incredible there. We were reminded of the perfect climate when we visited LA a few weeks ago. Your roses are just beautiful and so are the pictures (of the salsa, too!).
one more thing.. that first photo. LOVE the lighting in this shot. Love how the bowl is the brightest, most visible thing in the shot. LOVE the vignette – totally draws you in to the bowl. And the highlight on the front side of the bowl? WOW, just perfect.

Thanks for the rose photos! They are stunning! I have double knock out along the back of the house and they were solid dark pink last week. I would love to add a climber to our yard.

Really silly question, but I moved into a home last year and there are gorgeous roses blooming outside. I want to cut some to bring inside and enjoy. Where is the best place to cut roses off the bush so that I do not kill the rest of the plant?
beastmomma- cutting the roses far enough for a vase arrangement shouldn’t kill the plant. Trimming actually is good for the rose and encourages growth. But we’re not rose experts. Best is to consult your local nursery.
