Smash Dumplings, Potstickers, Gyoza or Mandu Recipe

These super popular bites are a part of so many Asian cultures and they all have some similarities. Not all are exactly alike nor are the names. But the concept for the smashed versions are the same. You can call them smash dumplings or smash potstickers. The Japanese gyoza version is great smashed as well. Korean Mandu is also fantastic when you smash them. How about Vegetarian version for Smash Dumplings?

We get a lot of questions about adapting our recipes to be vegetarian. For the vegetarian or even vegan smash dumplings you can use plant based ground meats. If you’re not a fan of manufactured meat alternatives then use mashed potato or even mashed sweet potato. The reason why potato works great is because it’s a great binder for the filling. The mashed potato holds all the chopped veggies together really well.

Types of Wrappers for Smash Potstickers or Smashed Gyoza

Basically any of these smashed dumplings options can use the small square or round wrappers. Doesn’t matter what they’re called or what shape they are, these type of wrappers all work. But if you can only find the egg roll wrappers, which are larger then just cut them into quarters. Even the larger refrigerated spring roll type wrappers used for frying egg rolls are fantastic. Again, just cut those into quarters for the perfect smash dumpling size.

Smashed Dumplings with Pork or Chicken

Make sure to chop the vegetables really small. If they're too chunky and big, you will have a problem getting the meat to stick to the wrapper.

Ingredients

  • 16 round dumpling or potsticker wrappers (approximately)
  • 1-2 Tablespoons (15-30 ml) oil
  • Dipping sauce of choice *see below Filling Ingredients for some of our favorites

For the Dumpling Filling

  • 1/2 pound (227 g) ground meat pork, chicken, beef or shrimp
  • 2 stalks green onion , minced fine
  • 1 Tablespoon (15 ml) minced ginger
  • 2 teaspoons (10 ml) soy sauce or fish sauce
  • 1 teaspoon (5 ml) sesame oil
  • 1 teaspoon (5 ml) garlic powder
  • 1/2 teaspoon (2.5 ml) onion powder
  • 1/2 teaspoon (2.5 ml) ground black pepper

Instructions 

  • In bowl combine all filling ingredients (1/2 pound ground pork, 1 Tablespoon minced ginger, 2 minced green onions, 2 teaspoons soy sauce, 1 teaspoon sesame oil, 1 teaspoon garlic powder, 1/2 teaspoon onion powder, and 1/2 teaspoon black pepper).

  • On each dumpling wrapper, place about 1-2 Tablespoons of filling in center. Spread filling over each wrapper all the way to the edges.

  • Heat large skillet or griddle over medium-high heat. Add light layer of oil. Lay meat filled wrapper meat-side down on skillet.
    Press down firmly to smash the filling flat. Cook for about 1-2 minutes or until meat is cooked and crisp. Make sure to press down firmly so the meat sticks to the wrapper.

  • Lightly spray or sprinkle oil over the top of wrappers.
    Then flip the smash dumplings and cook wrapper side down to crisp the wrapper, about 1 minute.

  • Remove from heat and allow to cool. Serve with your favorite dip or sauce.
