How lucky are we to be in mild So Cal weather? Very lucky, but we’re not bragging. And hey, we have congestion and smog to add to our heat, so there’s always a trade-off with our mild weather! After a long work day when we’re in town, we spent quite a bit of time in the backyard pulling weeds, trimming excess branches and building up a hefty thirst. Normally we have quite a collection of ice cold bottles of Rose in the fridge, but mixing it up with summer cocktails keeps us inspired and energized to weed some more. As of late, the mint seeds we sprinkled in the garden is taking off beautifully. An abundance of fresh mint in these strawberry mojito drinks are always a fabulous late Spring and Summer quencher.

Yes you can substitute different berries for our strawberry mojito cocktail! You can try this with muddled blueberries, blackberries or raspberries. There’s lots of possibilities to mix this recipe up with your favorite berries. Or you can do a mixed berry mojito and it will be equally delicious.

Strawberry Mojito Cocktail Recipe
Ingredients
- 1 ounce (30 ml) simple syrup , or to taste
- 3 (3) fresh strawberries (approximiately)
- 2-3 (4) fresh spearmint sprigs (chopped if you prefer smaller mint pieces in your cocktail)
- 1 ounce (30 ml) fresh lime juice
- 2 ounces (60 ml) light rum
- 3-4 ounces (90-120 ml) soda water
Instructions
- In a chilled highball glass (about 10-12 ounces), muddle the simple syrup, strawberries and mint leaves together with the back of a spoon or muddler. Crush the strawberries and mint leaves well.
- Stir in the lime juice and rum. Fill the glass with ice and top off with soda water. Gently stir.
- Garnish with mint sprigs or strawberry slices.

This is the third time I’ve read about this book in the past month…I’ll take that as a sign that it’s worth the buy. The cover photo alone is pretty alluring! It has been soon hot and humid here. It makes me want to go back to AZ! Isn’t that crazy? It finally rained last night, so hopefully the humidity will go away soon.
I have mojito mint and orange mint planted in a big whiskey barrel with lavender and Thai basil. The mint is overflowing so I guess I better get making something soon!

I had the best mojito this weekend at the Alibi Room. I am now a mojito convert. I am going to make these. They look delicious!
This could actually make me stray from my beloved gin – it looks *that* good. There might be some strawberry hunting at the farmers market next Saturday, just for this.
What a gorgeous drink. I usually like my mojitos simple and traditional but this looks like a version worthy of straying from tradition. I need to find a corner of my garden for mint to take over (since it always does!) next year.
Yum! So it’s really a regular mojito with strawberries thrown in. In a pinch you could use frozen ones. Or just about any complementary fruit. Watermelon might be nice.
I infuse my simple syrup with mint for extra minty goodness in mojitos. Just toss a handful of sprigs into the hot syrup and muddle them a little. Remove them when the syrup has cooled.
Oh this is almost cruel. We have had 100+ degree weather for at least a week and just lost power (meaning AC and fans) for 4 hours. If only I had this lovely concoction at the end of this ordeal to look forward to. Love mojitos – my favorite cocktail hands down.
Assholery! Blatant assholery! I am looking at that gorgeous libation (girly-lighting suits it!) and it’s almost 10pm and not a strawberry in sight over here. That’s just not fair to do to a girl on a hot summer evening. Wicked jealous of your cocktails…and your garden. If you weren’t so cute, I’d hate ya.
I am from Miami originally and am a hard core Mojito lover. This sounded so good that I had to run out to the local farmers market to get strawberries so I could make this. Absolute heaven.

Those berries look great! Our weather in my area of Hawaii keeps changing everyday. Today happens to be pretty hot, so that cool drink looks really good!
