After our surprise hit of making 7-up biscuits, we tested other batches by using sparking water and other fizzy white sodas like sugar free Fresca. And instead of regular shaped biscuits, we made cheddar crop biscuits. Again, another hit! They’re so easy, we’re making these everytime we have breakfast or brunch with friends.

Cheddar Drop Biscuits Recipe using Sparkling Water or Other White Sodas

You can check out our previous 7-up biscuits recipe and you’ll know why we’re having fun making other variations. This time we were craving cheddar drop biscuits and wondered if the same base ingredients could be used for drop biscuits. So we gave it a try and YES, these came out better than we had anticipated. We’re not big fans of drinking sodas but if we do, we’ll treat ourselves to an occasional sugar free Fresca or Zero 7-up. But we always are stocked with sparkling water so we gave it a try and yes, this worked great too!

Three Secret Ingredient Biscuits

It’s not so much of a secret ingredient anymore but it’s basically just using any (1) Bisquick or any baking mix. (2) add some sour cream and (3) the sparkling drink. Then it’s baked in melted butter. But adding some cheddar cheese and using an ice cream scoop to drop them on the pan with melted butter creates a whole different biscuit. The savory cheddar is fantastic to these drop biscuits.

Club Soda Biscuits

For those of you wondering about using club soda, yes! These are also often called club soda biscuits so you can definitely use club soda if that’s what you have on-hand.

Sparkling Water Cheddar Drop Biscuits or 7-up

When measuring the Bisquick flour, make sure to use a separate large spoon and pour the loosened flour into your measuring cup them scrape the top. That way the amount of flour you measure is isn't packed tight, which can lead to dense and dry biscuits.
Let the bubbles settle (or scrape them off) when measuring the 7-up to make sure you have the full 1/2 cup.

Ingredients

  • 1/4 cup (57 g) butter (1/2 stick)
  • 2 1/4-21/2 cups (270-300 g) Bisquick Original Pancake & Baking Mix
  • 1/2 cup (115 g) sour cream
  • 1/2 teaspoon (1.5 g) garlic powder
  • 1/4 teaspoon (1 g) salt , or to taste
  • 1/2 cup (120 ml) Sparkling water (or 7-up, sprite, fresda or any preferred light colored soda, club soda or beer)
  • 1 cup (113 g) grated cheddar cheese
  • 1 egg , beaten (optional) or use melted butter for brushing.

Instructions 

  • Preheat oven to 425°F/220°C.

  • In sheet pan add 1/4 cup (1/2 stick) of butter. Put sheet pan in oven and let butter melt.

  • Remove from oven after butter is melted.

  • In bowl combine 2 1/4 cups Bisquick mix, 1/2 cup sour cream, 1/2 teaspoon garlic powder, 1/2 teaspoon of salt and stir the dry mix to combine all the ingredients. The dough should be look like very small chunks.

  • Add 1/2 cup sparkling water or what ever fizzy soda you choose. When measuring the soda water, make sure to let soda bubbles settle to make sure you have 1/2 cup of liquid. If it's mostly bubbles you're pouring into the batter, then the biscuits will be dry and tough.

  • Stir the mixture until there's very little dry pockets. Don't over mix cause you don't want tough biscuits. If your dough is super sticky, mix in another. Tablespoon at a time of Bisquick mix.

  • Add grated cheese and stir to combine the cheese into the dough.

  • Using an ice cream scoop or spoon, drop about 1/4 cup of dough onto sheet pan with the melted butter. Leave space between biscuits.

2 Options for Brushing Tops:

  • Option 1: Dip a brush into the melted butter in the pan and lightly brush the tops of the biscuits.
    Optional 2: Brush the top with beaten egg or egg wash. The beaten egg gives a more golden color to biscuit tops compared to the melted butter or the egg wash.

  • Bake at 425F/220°C for about 18-25 minutes or until biscuits are cooked to your liking. Some folks their biscuits softer so about 20 minutes of baking works for that. But we like our biscuits a little crispy on the bottom so we like to bake for the full 25 minutes or more.
    Allow to cool slightly and enjoy with butter, jam, honey or whatever you like with your biscuits!

Other Cheeses and Flavors to Sparkling Water Cheddar Drop Biscuits

We love adding sharp cheddar cheese for the extra flavor but you can certainly use any of your favorite grated cheeses. Ideas such as parmesan, cheddar jack for a spicy kick or grated smoked gouda are outstanding options for a yummy cheese drop biscuit. Add a handful of chopped chives or parsley for a more herbacious flavor and you have a warm batch of tender biscuits in minutes.
