What is the Viral Soup Dumpling Lasagna?

It’s basically layered soup dumpling ingredients, like the way a lasagna is layered. Instead of wrapping each individual soup dumpling with filling and wrapper, this version is layered. It’s a brilliant idea because it’s so quick, simple and equally satisfying. It’s hard to not want to do a little less work, but still enjoy homemade dumpling flavors.

The best part about this layered soup dumpling recipe is that there’s more broth sitting at the bottom of the dishes. Don’t waste it. Just use your spoon when scooping through the meat and wrapper layers. Then spoon some of the delicious broth on spoon. Each bite is exactly like what you would taste in a soup dumpling.

Round Dumpling Wrappers or Square Wonton Wrappers?

Both will work! They’re basically made from the same ingredients and they only differ with the shapes. The most important factor in this recipe is choosing a vessel that can fit the wonton or dumpling wrappers.

  • LARGER DISHES: if you want to use a larger baking dish, like an 8×8 square then it’s totally possible. Just layer the wrappers side by side above the meat to create one large layer of wrappers.
  • If you’re using larger dishes, just know that you’ll have a thinner layer of meat. And you’ll need to use more wrappers.

Layered Soup Dumpling “Lasagna”

The amount of ingredients is for about 3 thin layers of meat and wrappers filled in 4 (3-4 inch wide) heat safe ramekins, small bowls or mugs. If you’re using a different size vessels, then cooking times will change and you might need more wrappers.

Ingredients

  • 16 round dumpling wrappers or square wonton wrappers
  • Optional for topping: sliced green onions, chili crisp or any hot sauce, extra soy sauce

For the filling

  • 1/2 pound (226 g) ground pork (or any ground meat)
  • 1 cup (70 g) finely chopped cabbage
  • 1/4 cup (30 g) shredded carrot , chopped small
  • 2 stalks green onion , sliced
  • 1 Tablespoon (15 ml) soy sauce , or fish sauce
  • 1 teaspoon (5 ml) sesame oil
  • 1 teaspoon (5 ml) garlic powder
  • 1/2 teaspoon (2.5 ml) onion powder
  • 1/2 teaspoon (2.5 ml) ground black pepper

Equipment

Instructions 

  • Chop the 1 cup cabbage, 1/4 cup shredded carrot, and 2 green onions together until they are finely minced. Set aside.

  • Add meat to the bowl and then add seasonings (1 Tablespoon soy sauce, 1 teaspoon sesame oil, 1 teaspoon garlic powder, 1/2 teaspoon onion powder, and 1/2 teaspoon black pepper).

  • Add chopped vegetables to the bowl and mix together all the filling ingredients until combined well.

  • Dip one wrapper in bowl of water

  • Lay the wrapper at the base of each dish.

  • Add a thin layer of meat over the wrappers.

  • Dip another wrapper in water and place over the meat.

  • Repeat the meat and wrapper layering twice more for a total of 4 layers of wrappers and 3 layers of meat, ending with the last layer with a wrapper.

  • Pour about 3 Tablespoons of water in each dish. If water is collecting on top of the wrapper, press the edges so the water seeps below the wrapper.

  • Place steamer basket over boiling water. Lay each dish in the steamer basket and steam for about 20 minutes with lid closed or until meat is cooked through.

  • (optional steaming) – add dishes to a large pan and fill pan half way with water. Place lid on filled dishes. Bring pan to a boil then lower heat to simmer. You have to be careful to not heat the water too hot or else the dishes can split or crack. Just monitor the water and heat. Or you can also use a rice cooker with a steamer basket on the bottom.

  • Allow the dumpling lasagna to cool a bit. Top with your favorite toppings and enjoy.
