Oh garlic mashed potatoes are dangerous. They’re too easy to eat and before you know it, we’ve inhaled 2 servings of it while washing it all down with a glass of wine before we’ve even made it to the turkey. Now that’s how addicting it is!

Alas, they’re still a favorite to have around when we need to mix up our potato routine. It’s not all that bad if we’re sharing this mashed potato casserole with friends and good conversation. The logic is to make it in a huge batch to share. That way we don’t ever make it when it’s just the two of us eating and when we do make it, sharing all the calories with friends in a big baking dish is more fun. That’s one way to rationalize our food obsessed minds without feeling the guilt and burden to inhale the whole darn batch ourselves.

Best Cheeses for Our Mashed Potato Bake Recipe?

We’ve made this garlic mashed potato casserole with different cheeses and it’s hard to nail down favorite combinations. Here’s some favorites:

  • Try goat cheese if you like the tang and flavor. It’s a great melting cheese too.
  • Parmigiano reggiano : you just can’t beat the nutty, rich flavor of this amazing cheese.
  • Smoked Gouda: we LOVE smoked gouda and when it melts with the mashed potatoes, the aroma is fantastic
  • Smoked, aged cheddar: get your hands on some of this rich, aromatic cheese and you’ll never regret it.
  • Mozzarella: this is a fantastic melting cheese and when combined with the others, you’ll get a fantastic cheese pull.

3-Cheese Garlic Mashed Potato Casserole

These are the perfect make-ahead-potatoes. Chill the whole casserole dish, but before baking, allow the whole dish to come to room temperature a bit before baking.  If you bake the dish straight from the fridge, then add extra baking time to compensate for the cold potatoes. And use what ever combination of cheese that you love! 
Our favorite potato to use for this recipe is Yukon Golds. If you can't find any, a regular russet works great.

Ingredients

  • Butter or cooking spray
  • 4 pounds potatoes (Russet or gold potatoes preferred)
  • 1 teaspoon garlic salt
  • 1/2 teaspoon onion salt
  • 1/2 cup sour cream
  • 3/4 cup milk
  • 1/4 cup butter , melted (1/2 stick)
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1 cup shredded Parmesan , divided
  • Kosher salt , to taste
  • Freshly ground black pepper , to taste
  • 1/2 cup plain bread crumbs or panko bread crumbs

Directions

  1. Preheat the oven to 400° F. Grease 9" x 13" with butter or cooking spray.
  2. Peel potatoes and cut into 1-inch pieces. Cook the potatoes in a large pot of well salted boiling water until they are soft and tender. This should be about 10-15 minutes, depending on the size and type of potato.
  3. Drain the potatoes and place in a large bowl or back into the same pot. Add garlic salt, onion salt, sour cream, milk and melted butter. Mash the potatoes to your desired texture.
  4. Mix in the cheese, reserving about 1/4 cup of the parmesan for topping. Season, to taste, with salt and pepper. Transfer the potatoes to the prepared baking dish. Sprinkle the remaining parmesan cheese and bread crumbs over the mashed potatoes.
  5. Bake, uncovered, until the cheese/bread crumb topping is golden brown, about 20 minutes.
