Three words: Different and amazing! No one online was making a dumpling enchiladas recipe so we just had to try and it’s fantastic! After sharing our popular dumpling Mac and cheese it was fair game to create a different twist on using frozen dumplings or frozen potstickers.

What Are Dumpling Enchiladas? Or Potsticker Enchiladas?

It’s our original creation and it’s delicious if you’re a fan of frozen dumplings or potstickers in enchilada sauce. This is by no means a traditional recipe. Taking frozen dumplings and cooking it in enchilada sauce is our own original way to enjoy frozen dumplings in flavorful enchilada sauce topped with cheese. Ok, it might sound odd but until you try it, you’ll realize why no one has created this before. So if you’re using frozen potstickers or frozen gyoza, then they’re potsticker enchiladas! And of course, gyoza enchiladas.

How to Serve Saucy Enchilada Dumplings?

Serve it as you would with any traditional enchiladas. Our friend serves them over a bed of lettuce, topped with cheese and salsa. So we did the same but this time with our dumplings and it’s AMAZING. We put out a whole spread of salsas, hot sauces, cheeses, guacamole and sour cream. The savory bites of dumplings goes so well with all the traditional Mexican enchilada sides.

What Type of Frozen Dumplings or Potstickers for this Enchilada recipe?

Use what ever frozen dumplings you want. There’s frozen gyoza and frozen potstickers with different fillings. They’re all great. We use the ones with a pre-cooked filling so cooking times are a little faster. There’s some new frozen dumplings out on the market that have raw filling. So if you’re using the frozen dumplings with raw filling, then just bake the dumpling enchiladas for an additional 10 minutes. Or pull one out of the sauce and test it to make sure it’s cooked all the way through. You can even use Trader Joe’s steamed soup dumplings, but the soup dumpling part of the dumplings may get lost in the enchilada sauce. Still tasty, however!

Store Bought Enchilada Sauce

This recipe and method isn’t rocket science. We bought the cans of prepared enchilada sauce at the store and it tasted great. But if you want to make a homemade batch of enchilada sauce, then go for it. You’re more ambitious than we are! LOL. The addition of some taco seasoning really added great flavor.

Dumpling Enchiladas Recipe

Dumplings vary in size so timing will vary a bit. Just pierce the dumplings after cooking and if they're not warmed through, then bake for a few more minutes.

Ingredients

  • 15 Frozen Dumplings
  • 28 oz. (793 g) enchilada sauce , red or green
  • 3 Tablespoons (45 ml) taco seasoning
  • 1/2 cup (57 g) grated cheese
  • Sliced green onion, chopped cilantro, jalapenos, guacamole, sour cream, chili crisp , optional Toppings

Instructions 

  • Pre-heat oven to 400°F (200°C).

  • In a 4 qt. baking dish (9"x13"-30×20 cm), mix the 28 oz. (793g) enchilada sauce and about 3 Tablespoons (45ml) of taco seasoning.

  • Whisk gently until sauce is smooth.

  • Add frozen dumplings into the sauce. Lightly drizzle some of the sauce over the tops of the dumplings that stick out above the sauce. This helps moisten the frozen dumpling tops.

  • Top dumplings with cheese.

  • Cover with foil.

  • Bake at 400°F (200°C) for about 25 minutes. 
    Remove the foil and bake for another 10-15 minutes OR until the sauce is bubbly the cheese is melted.

  • Top with any of your favorite toppings (green onions, chopped cilantro, jalapeño or Serrano chilis, chili crunch, guac or avocado, sour cream, etc.)

Re-heating leftover dumplings in enchilada sauce

All you need to do is to microwave the leftovers. The dumplings will be steamy hot in the enchilada sauce. Just add a fresh layer of toppings like salsa, green onions or chili crisp. The dumpling enchiladas leftovers are fantastic.
