We add this to a bowl of quinoa or as part of a salad for a quick lunch or dinner. Every time we make it, we gush at how delish and simple it truly is to make!

Easy Skillet Garlic Parmesan Chicken Bites

If you’re only cooking for two or for a big family of hungry eaters, these chicken bites are perfect every single time. You can adjust the seasonings to your liking and double or even triple the recipe. We’ve made this for our younger family members and they literally are licking their plates clean. Tender chunks of garlic parmesan seasoned chicken has them excited to ask for a second helping.

Chicken Breast vs Chicken Thighs

We’ve tested the recipe with boneless skinless chicken breast and boneless skinless chicken thighs., Both are great! So use what ever your favorite cut of chicken is. Just make sure you’re using skinless and boneless. This makes cutting the chunks of chicken easier and removing the skin is healthier. There’s other different cuts of chicken to explore too.

Chicken Bites with Parmesan & Garlic

You can use either chicken breast or thighs for the recipe. Using skinless and boneless makes cutting the chicken the easiest. If you are using chicken breast or tenders for the bites, like anytime with chicken breast, they are a bit less juicy and if cooked a little more will seem dry, especially if they sit and get cold. When using chicken breast, we make sure to eat them while they are still hot and juicy.
If you want to add veggies to the dish, make sure they are veggies that cook quick and about the same timing as the chicken. It helps to keep the veggies cut small as well.
When seasoning the chicken, the parmesan will add a bit of saltiness to the final dish too. Some parmesan cheeses will be saltier than others, so adjust to your liking.

Ingredients

  • 1 1/2 pounds (680 g) boneless skinless chicken , (breasts or thigh) , cut into about 1” bite sized pieces (approximately)
  • 1 Tablespoon (15 ml) Worcestershire sauce
  • 1/2 teaspoon (2.5 ml) onion powder
  • 1/2 teaspoon (2.5 ml) dried oregano , or any dried/fresh chopped herbs
  • 1/2 teaspoon (2.5 ml) kosher salt , or to taste
  • Fresh cracked black pepper , to taste
  • 2 Tablespoons (15 g) all-purpose flour , or cornstarch
  • 3 Tablespoons (42 g) butter , divided
  • 3 cloves garlic , minced or crushed
  • 3 Tablespoons (15 g) grated parmesan cheese
  • 2 Tablespoons (30 ml) chopped parsley

Instructions 

  • Cut the chicken into about 1-inch (2.5cm) sized pieces.

  • In a bowl, season the chicken with 1 Tablespoon (15ml) Worcestershire sauce, 1/2 teaspoon (2.5ml) onion powder, 1/2 teaspoon (2.5ml) dried oregano, about 1/2 teaspoon (2.5ml) salt (or to taste), and black pepper to taste.

  • Evenly coat the chicken with about 2 Tablespoons (15g) of flour or cornstarch. After stirring and if there are any uncoated spots, sprinkle a little more until all pieces of chicken are coated.

  • On medium-high heat, melt 2 Tablespoons (28g) of butter in a large skillet. When the butter is sizzling, add the chicken and stir and spread it into an even layer, and if you can, leave space between the chicken as it cooks to give crispier sides.

  • Brown the chicken on all sides, about 2-3 minutes per side (depending on heat, size of chicken, breast or thigh meat, etc.). Continue to cook, stirring occasionally, until chicken is cooked cooked through (you can often tell by the firmness if it is cooked through or you can cut a thicker piece to see if it is cooked through).

  • Add the remaining 1 Tablespoon (14g) of butter and minced garlic to the chicken. Cook for about a minute or until the garlic is softened and fragrant.

  • Remove from heat and stir in the 3 Tablespoons (15g) of parmesan cheese and chopped parsley. Add additional salt and pepper to taste and then serve warm.

We love eating low carb and these chicken bites are so easy to fit that lifestyle. But you can serve it for kids who love their carbs!

  • Healthy Chicken bites bowl with quinoa, couscous or brown rice. We’ll add some avocado and/or black beans on top to make it an extra high protein meal.
  • Big salad with the chicken is always a great healthy lunch. Again, add some chunks of avocado and beans on top for extra protein.
