Easy 7-Up Biscuits Only 4 Ingredients (or Sparkling, Soda water, Beer)
We had heard of such a thing…. using a fizzy drink to make fluffy biscuits. Have you heard of this? Well we finally gave it a try one morning and holy wow what the?! Yes, these easy 7-up biscuits are amazing even with the zero 7-up we had in the fridge. Then we tried it with sparking water and then with beer. Needless to say we were giving everyone we knew the fluffiest most tender biscuits ever!
Why use Sparking Fizzy White or Clear Carbonated Drinks for Tender Biscuits?
The science is simple. The fizzy carbonation activates the baking soda in these baking mixes. That’s why the biscuits are so easy to make and always turn out super tender. We’ve tested them with different white carbonated drinks and all the results are great.
- 7-up, Sprite, Fresca or any lemon lime/citrus white or clear soda. This adds a natural subtle sweetness to the biscuits.
- soda water or sparkling water that’s neutral in flavor works too.
- light amber beer is crazy amazing. We tested a batch with beer but the beer flavor doesn’t really come through. It’s a good option if you already plan on having an open bottle of beer

Quick 7-Up Biscuits or Soda Biscuits Recipe Tips
- Make sure the soda is new from the can or bottle. You need that carbonation to activate the dough.
- Let some of the big bubbles fizz out or scrape them off before you pour the liquid in. Make sure it’s 1/2 cup of liquid and not 1/2 cup of bubbles. If it’s all bubbles, your mix will be too dry.
- Use a popular premade baking mix like Bisquick, Krusteaz or Betty Crocker. We’ve tested them on these and they work great.
- There’s many other brands of pancake mixes but we have not tested them on all the different brands. It would be impossible to. But if you want to try something differnet, let us know in the comments about the results you got.
- Brushing the biscuits with a beaten egg will give the biscuits a nice golden top. But you can always use a brush and dip into the melted butter that’s already in the baking pan.

Brush with Egg or Butter?
We always get asked this question and it’s a personal one. You can use either melted butter or an egg wash (or even just beaten eggs). If you’ve always brushed your biscuits with butter, then go for it. You have more flavor with butter but less of a golden color on top. If you like more color, then go for the egg wash. Check out the difference in the photo that we captured showing the two different tops after baking.
7-up Biscuits
Ingredients
- 2 1/4-21/2 cups (270-300 g) Bisquick Original Pancake & Baking Mix
- 1/2 cup (115 g) sour cream
- 1/2 cup (120 ml) 7-up (regular, zero or any preferred light colored soda, club soda or sparkling water)
- 1/2 cup (113g) butter (1 stick)
- 1 egg , beaten (optional)

- Preheat oven to 450°F/230°C.
- In 9"x9" baking dish (or similar) add 1/2 cup (113g) (1 stick) of butter. Put dish in oven and let butter melt. Remove from oven after butter is melted.
- In bowl combine 2 1/4 cups (270g) Bisquick mix, 1/2 cup (115g) sour cream. The dough should be look like very small chunks.
- Add 1/2 cup (120ml) 7-up or club soda option. Stir until there's very little dry pockets. When measuring the 7-up, make sure to let soda bubbles settle to make sure you have 1/2 cup of liquid. If your dough is super sticky, mix in up to another 1/4 cup (30g) of Bisquick mix.
- Dust your surface with a light layer of Bisquick mix and lightly dust your hands with the mix.
- Lay dough on top. Gather the dough into the center to form a ball. The dough will be very soft and sticky, so don’t press your fingers into it too hard. Just gently pat it with the palm of your hands.
- Press down on the dough and make it flat about 1/2 inch (1.25cm) thick.
- Fold and slightly flatten the dough 3 times. If needed add small dustings of dry bisquick mix.
- For final fold, flatten the dough to 1/2 inch (1.25cm) thick. The thicker the dough, the thicker the biscuits when they bake. So if you like thick biscuits, then you'll need to cut 8 biscuits. For thinner biscuits you can cut about 10-12.
- Cut dough into 8 pieces. Don’t be wasteful, so if you’re using a round ring cutter, start at the very edge of the dough so you can get the most biscuits out of the dough.
- Once butter is melted in the pan, lay the raw biscuits in pan. Leave a little space between the biscuits so they can rise higher.
2 Options for Brushing Tops:
- Option 1: Dip a brush into the melted butter in the pan and lightly brush the tops of the biscuits.
- Optional 2: Brush the top with beaten egg or egg wash. The beaten egg gives a more golden color to biscuit tops compared to the melted butter or the egg wash.
- Bake at 450°F/230°C for about 20-30 minutes or until biscuits are cooked to your liking. Some folks their biscuits softer so about 20 minutes of baking works for that. But we like our biscuits a little crispy on the bottom so we like to bake for 25-30 minutes.Allow to cool slightly and enjoy with butter, jam, honey or whatever you like with your biscuits!
