Croissant Breakfast Casserole
It’s hard to not love a make-ahead croissant breakfast casserole. This family style breakfast bake filled with savory ingredients is perfect for those mornings when you need to feed family and friends with minimal work. Best of all, these are perfect for using leftover croissants or Costco croissants, which are so budget friendly.

Make Ahead Croissant Breakfast Casserole
All you need is to make the casserole the night before, then take it out and bake it the next morning. For the best texture, we like to assemble everything except the milk & egg mixture in the baking dish. Then in the morning, add the milk/egg mix on top and bake. So easy and delicious! When you have guests over for breakfast this is a wonderful make ahead morning casserole that’s savory, satisfying and comforting.

Some of the most popular breakfast casseroles use hash browns or tater tots, so anything potato based. But this time we wanted to use something different like in our cornbread breakfast casserole. Croissants are the perfect base for savory breakfast bakes and if you can get your hands on Costco croissants, then even better. They’re budget friendly and wonderful for other meals like croissant bread pudding and croissant egg boats.

Add Different Fillings
You can easily add any of your favorite cooked meat fillings or sauteed vegetables. Cooked bacon, sausage or ham are great options. If you use all three meats then it becomes a meat lovers croissant breakfast casserole. Other cooked vegetables like pre-sauteed onions, bell peppers or spinach add a nice flavor and vegetarian option.

Croissant Breakfast Casserole
Ingredients
- 4-5 large croissants (cut into 1”/2.5cm pieces – about 4-5 cups after cutting)
- 3 Tablespoons (45 g) butter , divided & at room temperature
- 1/2 large onion , chopped
- 8 oz. (227 g) uncooked bulk sausage
- 1/2 teaspoon (2.5 ml) salt , or to taste
- 1/2 teaspoon (2.5 ml) black pepper
- 1/2 teaspoon (2.5 ml) garlic powder
- 1/2 cup (75 g) chopped bell pepper (optional)
- 3 green onions , chopped
- 2 cups (48 ml) milk
- 5 large eggs
- 1 cup (113 g) grated cheddar cheese , or cheese of choice

Instructions
- Pre-heat oven to 375°F (190°C) (unless making ahead). Butter a 9”x13” baking dish with 1 Tablespoon of butter.
- Heat a skillet over medium-high heat then melt the remaining 2 Tablespoons of butter. Add the chopped onions and sauté for about a minute or until softened. Mix in the 8 oz. sausage, breaking up big chunks, and cook until browned.
- Add about 1/2 teaspoon each of salt, pepper and garlic powder. Stir in the optional chopped bell peppers and green onions and cook for about a minute or until softened to your liking. Remove from heat and set aside.
- Whisk or beat together the 2 cups of milk and 5 eggs. Set aside
- Cut the croissants into 1-inch (2.5cm) pieces (you should have about 4-5 cups of croissant pieces when gently packed).
- In the prepared baking dish, layer all the croissant chunks.
- Spread all the meat mixture evenly over the croissant. Top evenly with about 1 cup of grated cheese. At this point for a make-ahead dish we prefer to cover the croissant/meat mixture and chill it separately from the milk/egg mixture. Then the next morning continue with the recipe.
- Pour milk/egg mixture over the croissant. Gently press down on the mixture to let the egg/milk soak to the top.
- Bake uncovered at 375°F (190°C) for about 30-35 minutes or until golden and egg is set. If you have a smaller, taller baking dish then the casserole will be thicker and you might need more cooking time. The more spread out the mixture is in your dish, the quicker it will cook. Different baking dishes will also cook at different rates (ex. glass & thin disposable foil pans will cook faster than a thicker ceramic or cast iron baking dish).
- Serve warm.
