Memories from my vegetarian days were coming back and reminded me of my college years. In fact, my days of being vegetarian lasted till not long ago, 2008. For 19 years, I lived a meatless life where I nourished my days with vegetables, tofu, legumes and occasional dairy products. Then I stumbled upon what was called a “food blog” and I slowly started eating meat again, leaving behind my nearly two decades of eating meat free.

What were once green, sprawling serpents have now reached  the peak of their pod-producing craze. The sugar-snap and snow peas have slowed down considerably and finally, we were able to keep up with them. Every morning for the past 2 months we had an espresso in one hand and went out to breakfast on the pea pods. We felt like grasshoppers grazing on all the pea tendrils and vines.

The fresh crunch and sweetness of all the pea pods was great, but after 2 months of chewing on green pods, we’re ready to plant our tomatoes!

Vietnamese Spring Rolls – tofu, basil, garlic soy dip

Curry Tofu and Basil springroll Recipe

Ingredients for Springrolls:

1 pkg of firm tofu.
1/2 cup peanut or vegetable oil
1 Tablespoon curry powder
1 teaspoon cumin
2 cloves garlic
5 table spoons soy sauce
2 teaspoons salt
2 teaspoons fresh ground black pepper
1 teaspoon sesame oil
lettuce
fresh thai basil
cucumbers
rice paper

1. Drain Tofu and blot dry with paper towels to remove excess moisture. Slice into about 1/4 ” pieces.

2. Wash basil, lettuce and cucumbers. Slice cucumbers into matchstick sizes.

Choosing a Very Firm or Extra Firm tofu in crucial, especially when making the frites because the small strips of tofu will break apart easily for anything other than the firm tofu. The plastic wrapped blocks of tofu normally found at Viet markets do not work very well with frites because of the many air pockets in these blocks of tofu that cause the thin strips to crumble. The best best for both the frites and mojo’s are the square, firm tofu packed in water.

Roasting Raw Nuts

Method 1: In the Pan. Works great for smaller batches, since there is no need to wait for the oven to warm up. Over medium heat, toast nuts and stir frequently so the nuts toast evenly. Remove from heat when they start to turn color. They will continue to cook a little after they’ve been removed from the heat.
