Ginger Chicken Egg Drop Soup Recipe for Sunday Supper & Good Bite

We should all take a break from our hectic lives and rejoice more with family at Sunday supper. It’s a perfect weekly occasion to gather up the family, wind down with a wholesome meal and enjoy one anothers company. Often times we all get so busy to have a dinner together as a family, and it takes a little more effort and reminder to realize how wonderful it is to gather around the dinner table with our family and friends.

Good Bite and Campbells have partnered together to remind all of us of family Sunday gatherings to end a long week and start off the new one with good food and conversation.

They’ve asked 5 bloggers to create a recipe using Campbells Great for Cooking Soups. Each of the bloggers have also chosen a charity to support . The food blogger with the most votes for their recipe would be awarded $1,000 that goes directly to their chosen charity.

The bloggers participating with their original recipe and chosen charity are:

  • Julie Van Rosendaal’s Roast Chicken Cobbler with Cheese Biscuits
  • Marc Matsumoto’s Beef Bourguignon
  • Laura Levy’s California Coq au Vin
  • Cory Gallant’s Chicken Broccoli Pasta
  • Diane (me!) Ginger Chicken Egg Drop Soup

This was a fun project for me because I love Sunday suppers and I know of the perfect recipe for not just Sunday supper gatherings, but for any occasion where you’re looking for a quick, easy and satisfying soup. My pantry always has an extra cache of chicken broth (as should most pantries!) and whipping up this flavorful and and hearty soup takes just a few minutes to prepare. The addition of fresh ginger adds a special bite and fragrance to this already yummy chicken soup. Swirling the egg in the end ties all the ingredients together perfect for a favorite chicken egg flower/drop soup.

My chosen charity is the The National Farm to School Program: A charity where Farm to School connects schools (K-12) and local farms with the objectives of serving healthy meals in school cafeterias, improving student nutrition, providing agriculture, health and nutrition education opportunities, and supporting local and regional farmers. www.farmtoschool.org

Diane, the farm to table/farm to school programs are so important! Your soup looks wonderful. So simple to prepare and very healthy. I need to share this with my family. With 2 small children we are making sure that family meals happen regularly.

We have family dinners most every night. I have really happy memories of our mid-week family dinners when I was growing up, and I want to continue that tradition now that I have my own kids. It’s especially important to me since my husband and I both work full-time outside the house, so we don’t get to see our kids nearly as much as we’d like during the week. We all love soup dinners, and this one looks delicious. I voted! Thanks for posting this great idea and for supporting such a worthy charity.

About to go vote. I love chicken egg drop soup but don’t often make soup at home though I love it. Hmmm, you’ve got me thinking I have to get on a soup-a-thon.

I voted! I like the charity that you have chosen. My son and daughter are at universities, in Ontario, and they have to be able to prepare quick, tasty meals. I am sending your recipe to them. I’m sure they will love it!

    Beautiful! Love the fresh ginger!

My mom is a pastor, so (perhaps ironically) we never did Sunday dinners — Sunday was a working day! But this soup looks like it’d work any day of the week :-)

Well done, I haven’t had egg drop soup in a long while, it was one of my favorite light soups, and the photography says a million words… one of which is DELISH!

We make Tom Yum Gai with Campbell’s chicken rice soup, so KNOW what you are making is better! It works for us when in a hurry, you know? Will go vote this minute! The charity is souper, too. Hehe. Hugs to you and Todd.
