Époisses Ecstasy

Talk about stinky love, this epoisses cheese is considered one of the most pungent French cheeses of the world and I’m infatuated with it. The French in Burgundy know exactly how to take raw cows milk and transform it into an epoisses ecstasy. Underneath this orange, rippled rind hides a soft, creamy, explosion of earthy, pungent flavor.

When it’s ready to be eaten, the cheese interiors ooze out, dripping like liquid gold onto my plate and infusing the air around me with pungent perfume. I’m hopelessly addicted to it and if not careful, this whole round (along with a baguette) can disappear before the evening’s end. I’m now exercising portion control by sectioning out a smaller piece and limiting myself to savor it a little at a time. If not, I can really go out of control because epoisses possesses all my vices – fatty, rich, salty and stinky. It’s also not cheap, and I can’t seem to justify eating this $25 round of cheese all by myself in one sitting. Along with a glass of beautiful 2004 bordeaux that was gifted to me for Christmas (thank you, my love “T” ), I’m in French heaven, screaming out “Oui! Oui!”.

I love epoisses also and I find that after eating it for awhile the stink seems to fade away an my nostrils get a bit of a break. I always find myself coming back to this cheese because it is so good. Try heating it in its round box for 1 min at 325 and then spread it on a croissant, this is mind-expanding pleasure.
If you want to be bowled over by another cheese, try Stinking Bishop. It is a washed rind English cheese that really lives up to its name. This bad boy is washed with pear juice and allowed to ripen until the odor is , well shall we say, overpowering. The good news here is that most of the stink is in the rind , so if you remove it you will be rewarded with a really great cheese inside and will not have too much smell overload.
