Do you have friends or family that have an aversion to mint? We know of a few and it’s always a good reminder to have alternative herbs on-hand for those last minute emergency changes. With Summer at it’s peak, arugula watermelon mint and feta salad is a staple at so many bbq gatherings and Summer potlucks. But we’re also very attentive to our friends who gag when they eat fresh mint, so our watermelon salad version is one that is adaptable to everyones palette. There’s no reason why we shouldn’t be making this salad if *you know who* is coming. Seriously, with fresh herbs growing like weeds this time of year, there’s so many other versions of this classic watermelon feta salad to make. The herb possibilities are endless when it comes to adding your own twist this popular watermelon salad.

We’ve tested different versions of this salad with a plethora of different fresh herbs and still can’t narrow down a favorite. Ugh, we have favorite-salad-problems. Fresh basil alone is a fabulous addition and every bite screams summer. How can it not when every market and practically every garden plot has a bush ready to be plucked? Some folks love parsley and literally add it to everything. So there’s a arugula watermelon feta parsley salad version waiting for you parsley lovers. Probably one of our favorites is the version that has everything, literally a ton of fresh herbs. It’s the best version for eaters like us who can’t decide on singling out an herb. The addition of fresh dill is definitely the one flavor that makes our customized version truly unique. Fresh dill is sometimes the forgotten herb and only thought of when you’re grilling seafood. But chopped fresh dill in a salad, on dressing or even grilled food is spectacular.

Watermelon Salad Recipe with Arugula, Feta, Mint or Fresh Herbs | @whiteonrice

Watermelon Salad with Arugula, Feta, & Fresh Herbs

Yield: Serves 4-6

Total Time: 15 minutes

Feel free to use whichever herbs you prefer. Our first choice is usually spearmint, however it's nice to change it up every once in a while.

Ingredients:

  • about 4 cups (960ml) watermelon chunks (about 1 inch cubes)
  • 3 Tablespoons (45ml) olive oil
  • zest 1 medium lemon
  • 1 Tablespoon (15ml) lemon juice
  • 1/4 cup (60ml)  fresh mint, oregano, basil leaves, parsley or dill, chopped (reserve a few whole leaves for garnish)
  • about 4 ounces (113g) feta cheese
  • 3 cups (about 4oz-113g or 720ml) fresh arugula
  • freshly ground black pepper
  • kosher salt to taste, optional

Directions:

  1. In large bowl combine olive oil, lemon zest, lemon juice and mint (or herbs or choice). Stir to combine.
  2. Add watermelon chunks and gently stir to coat the dressing in the watermelon.
  3. Add feta cheese, arugula, black pepper. Gently toss to combine all ingredients. Taste for seasoning and add salt if needed. Serve chilled.

Best Peach Recipes for Summer Peaches | @whiteonrice

We just can’t get enough of great Summer peaches. Luscious, juicy and drippy sweet stone fruit in any shape or form is one of the most special treats of the season. Our yearly Summer highlights include taking time to drive to different roadside fruit stands. Visiting different local farms that sell their peach or stone fruit is like walking into a candy store. A few weeks ago we were lucky enough to score whole flat of perfectly ripe and super sweet peaches for only $7.90. We literally won the peach lottery. That’s what it feels like when you get to dive into a ton of Summer peaches that were ripened to perfection.

And now, we’re not stopping because all of the seasons wonderful stone fruit are still overflowing at the markets and fruit stands. It’s hard for us to not walk away with ten pounds worth of peaches and other stone fruits. We’ll eat them until we can’t breathe anymore. A dinner for us can easily be a couple of stone fruits and a glass of sparkling rose. Peaches and rose are perfection together. But aside from enjoying them fresh, what would you do with an overload of peaches that you can’t eat fast enough? We’re starting to have this problem (a very good dilemna) of having an overload of peaches. Korean Kimchi Burgers with Gochujang Sauce | @whiteonrice

If you love sauces, particularly ones with a kick of sweet and spice you’re going to love Korean Gochujang sauce. It’s a savory, sweet and spicy sauce that is a staple in Korean cuisine and a popular table top condiment. Gochujang sauce is a rich red chili sauce condiment that can be used on anything and everything: vegetables, seafood, chicken, pork, beef and probably even ice cream. If not on ice cream now, it will probably show up at a food festival or fair near you. Gochujang sauce is usually in paste or sauce form and found in every Korean market. There’s so many options, it can be intimidating when a whole aisle in the Korean market is filled to the brim with Gochujang sauce. Yup, it’s that vital to Korean cuisine and down in our Southern California Korean supermarkets, there’s never ever a shortage of different brands and variations. There’s so many to choose from, it can be dizzying and dreamy all at once.

We were at a food festival and free bottles of Gochujang sauce were being passed around like free shots of Bourbon. Everyone was grabbing what they can and obviously, there was quite an obsession to this sauce. Two of the companies that were handing it out were calling it “Spicy Sweet Korean Ketchup”, which is aptly named because it’s pretty much spot on. These two bottles were developed and packaged more for the Western palate because it’s “squeezable” and it was in 8 oz bottles, which is significantly smaller than most gochujang tubs found at Korean Markets. Either way, we were addicted to the sweet and spicy flavors on fries, vegetables and of course, burgers!

Bibigo Gochujang Sauce: this is a sauce we use and enjoy. It’s darker and thicker than most gochujang sauces and is similar to bbq sauce in flavor & texture. So we see it as more of a Korean bbq sauce than the typical Korean “ketchup”.
Chung Jung One Gochujang Sauce: this is brighter red in color and brighter in flavor. The red chili flavors come through just enough without being too spicy. Equally delicious, just different from the Bibigo.

The warmer weather has arrived and so has everything else that pairs with it: Summer grilling, potlucks, parties and lots and lots of sweet corn. Few foods say summer like fresh corn. Those sweet juicy kernels clustered around the cob pleading for someone to eat them. Last month we were wanting to cook more corn recipes for clients on-set and wanted to make a corn salad recipe that was easy to eat. Basically everyone loves corn so much and we all agreed that it’s easier to eat the kernels by the spoon-ful than to bite it off the cob. Besides, it’s much cleaner to shovel all the kernels in our mouths than to make a mess off the cob.

It was last Thanksgiving that we wanted to take advantage of the holiday where everyone was going to be gathered around the feasting table. We thought it would be a brilliant idea to hop in the truck with the pups and visit these super popular National Parks during the off-season. The weather would be perfect and cool for the pups and we’d have both parks all to ourselves! Maybe it’ll be snowing and we’ll get to see Bryce Canyon in it’s Winter glory! Nope, we were wrong on basically all of our assumptions except for the Winter glory part.

Holy geez cow. It seemed like tens and thousands of other people had the same, brilliant idea that we had. Both parks were flooded with excited adventurers like us. After talking to some park rangers, we “kinda” did have a good idea to be traveling at the end of November. BUT during the Thanksgiving holiday weekend, visitors to the parks sky rocket and create a mini-peak season during Thanksgiving. So we weren’t alone, but we still made the most of our trip and it was wonderful.

Dogs aren’t allowed on non-paved trails in National Parks and only allowed on designated paths, but that didn’t stop us from having an amazing trip. The views were spectacular and the pups still enjoyed hanging out on the paved paths with all the other visitors and their pups. Bryce Canyon was tremendous. Gosh, we can’t say enough about how gorgeous all the red rock formations were when topped with snow. It was dustings of powdered sugar everywhere throughout the park and in some parts, the snow was pretty thick on the mountains. If you guys are wanting to visit with your pups, make sure it’s not during the hot Summer because it can be really uncomfortable for the pups where temperatures in Bryce Canyon during Summer can reach day time highs in the mid 80’s F. Sure, that’s ok for humans but for dogs, it’s like wearing a jacket in the middle of the hot Summer sun plus the heat coming off the pavement doubles up their discomfort. So our November trip was perfectly planned for the pups. No panting dogs in the car and that itself was a pleasurable road trip.

Teriyaki Burgers with Homemade Teriyaki Sauce Recipe and Mango Salsa Recipe | @whiteonrice

A while back, we were lamenting about how overly sweet and artificial some bottled teriyaki sauces were. With the exception of one that we liked on our teriyaki burgers, most were too sugary and processed tasting. With the grilling season underway, we wanted some teriyaki variety to our bbq menu and it was always a struggle to search for a bottle that didn’t look like a gob of sugary, sticky brown sauce. We needed to think outside the bottle and needed to be quick about it because guests were coming over in a few hours. Mission: think fast and work fresh. How difficult was it to make a homemade, fresh teriyaki glaze for our burgers?  Not at all. It was one of the easiest sauce recipes we’ve ever created and can’t believe our bbq’s went without it.

Team lunch is always mandatory when we’re working at the studio. It’s the 30 minutes that everyone one-set can walk away from focusing on all the food details and get to chill with a big lunch spread. When other food stylists are on-set we get more free time to create a huge lunch with all the trimmings, including homemade dressings for our salads. Everyone on-set is always asking for our homemade caesar salad dressing and are always asking what we put in it. Maybe it’s all the fresh lemon zest and Parmigiano Reggiano. Or maybe it’s the generous amounts of anchovy fillets or paste. What ever it is, it’s our homemade version that will make it hard for you to ever want to buy a pre-made bottle again.

Healthy Garlic Parmesan Salmon Recipe Oven Baked | @whiteonrice

We’ve been hosting quite a few “Happy Hour” gathering at our house lately. Reason is because a combination of a few things: we love gatherings, cooking and hanging out with cool people. We feel super lucky to be working with such amazing clients and creative teams. And best of all, it all revolves around food. It’s not very often that many can collaborate with folks in our work lives and still love hanging out with them after the end of a long work day. Yet that has been the case for us and thus, our “Happy Hour” evenings at our house! But our Happy Hour’s are a little different in that we’re too obsessed with cooking and it actually really becomes a long dinner that sometimes continues late in the evening. It’s totally ok to go past 6pm cause that’s when all the fun starts to happen.

Hi Friends, hope your Spring is going well and your weather is warming up! We’ve been busy on our end over here with so many client projects that’s had 2017 speed by like a lightning. We thought it’d be fun to share some of our latest work with you guys that we’ve been super proud to be a part of! It’s Thermador’s new and amazing Share the Exceptional project. It’s been an honor to take part in this project that is right up our alley because it’s all about food moments that make life so unique and memorable. We’re all about those food moments because that’s the reason why we started this blog long ago. It’s so cool to fast forward all these years and still be able to work on projects like these that celebrate the times that we’re in the kitchen and making memories with the people that matter most to us. If you guys have a really special or fond food memory you should share your story with Thermador over on their site and see what the world has been sharing. We’d love to read what has inspired you and your culinary moments.

So Thermador asked us to develop and photograph some very special recipes for this project and you guessed it, it was hard to pass it up. The studio was filled to the brim with amazing ingredients that is really was like a food paradise and playground. We also were able to prepare and style those recipes for a video project. It was so fun to watch the director, creatives and the talented production team film and make everything in this gorgeous this video happen. They had the hard part of the job! OMG if you saw all the hard work they put into this project for the past several months, you’d want to take a seriously long vacation on the beach. We were totally ready to take that vacation for them. And as always, we had the easy part: playing with all the food and making it pretty.

I may be Vietnamese, but I’m no expert in Vietnamese food, nor have I ever met a true Vietnamese food expert. Every time I get together with elder Vietnamese cooks who have traveled through different parts of Vietnam, their list of new food discoveries grows longer by the day. They are always humbled by the vast differences in not just regional food differences, but differences within each family household and tradition.

It wasn’t until towards the end of my 24 years (yup, I was a manicurist for 24 years!) of working in my Mother’s nail shop and talking food with her Vietnamese staff that I realized how much I was going to miss this crazy but collectively unique group of passionate ladies. They all grew up from different regions of Vietnam, hailing from the furthest Northern forests to the most Southern hot villages of the country. What made me adore our often curious and heated conversations was their passionate food traditions and beliefs. I learned so much from them as I stalked them every time they ate their lunch. But I was respectful and waited until they finished before I bombarded them with all my food questions.

I listened intently, like a curious kid but with an analytical mind, like a Grad Student, to their beliefs on what made the best pot of phổ noodle soup and why their sticky rice was more flavorful and moist than the neighbor’s across the street. Some claimed to make the best braised fish in claypot because it was their Grandmother’s recipe. And to top off the challenge, Grandma gave birth and raised 9 kids in a 500 square foot shack along the rice paddy fields in central Vietnam during the war.
