<p style="text-align: justify;"><em><strong>Vegetarian Chili Recipe with Roastes chiles<br /></strong></em><em>Beware! not all chilies are alike. Normally I use anaheim chiles, but their spice level varies. Proceed with caution and add the roasted chiles to your personal taste and spice level. </em><em>Also, when handling chiles, try to use gloves. </em></p>

<li>1 medium anaheim chili</li>
<li>1 15 oz can of red beans, drained and rinsed</li>
<li>1 large carrot, small dice, about 1/2 cup</li>

<p style="text-align: justify;">Memories from my vegetarian days were coming back and reminded me of my college years. In fact, my days of being vegetarian lasted till not long ago, 2008. For 19 years, I lived a meatless life where I nourished my days with vegetables, tofu, legumes and occasional dairy products. Then I stumbled upon what was called a &#8220;food blog&#8221; and I slowly started eating meat again, leaving behind my nearly two decades of eating meat free.</p>
<p style="text-align: justify;">I&#8217;ve been missing those vegetarian days, where I was often called a &#8220;veg head&#8221; by my circle of carnivores and herbivores. It never bothered me one bit when I was surrounded by meat and my choice back in college to start being a vegetarian wasn&#8217;t for political, social or religious reasons. I just didn&#8217;t like eating meat any more. Vegetables, legumes and whole grains satisfied me and nourished me completely. I was a happy eater and that was all that mattered.</p>

<p style="text-align: justify;">This has been an incredible week at the <span style="color: #993300;"><a href="http://steamykitchen.com/" target="_blank"><span style="color: #993300;">Steamy Kitchen</span></a></span> Compound/Resort/Farm/Retreat. Home. Diane and I red-eyed a flight across the country on Sunday night, arriving with the sunrise on Monday. Jaden is in the process of her next fantabulous cookbook and we came in for the week to help her power through a section of the photography. We rounded out the team with Jenna from <span style="color: #993300;"><a title="Eat Live Run Blog" href="http://www.eatliverun.com/" target="_blank"><span style="color: #993300;">Eat, Live, Run</span></a></span> to complete our shooting posse.<br /> This week flew by. Jenna and I prepped, seared, and sliced away in the kitchen while Diane and Jaden sistered up in Jaden&#8217;s studio to finish styling and shoot the recipes. The rhythm and efficiency of the team was astounding, if I do say so with pure humility. The first full day we cranked out 16 beautiful recipes and it seemed effortless. Each day, even after busting out a ton of recipes, we wound down by shaking up some cocktails, pouring glasses of wine and then we cooked some more. What is better than home cooked meals with people you love hanging out with?</p>

<p> <strong>Curried Smashed Potatoes Recipe</strong><br /> <em>We like using fingerling potatoes the most for this recipe, but any small potato will work nicely (Baby Reds, Baby Yukons, etc.) Serves 4-6.</em></p>

Smashed Potatoes. Not mashed. Cooked whole, smashed to flatten and crack, then seared on a pan to crisp up. It is our favorite way to have a good potato, and that&#8217;s saying a lot considering how much comfort and love we have for the almighty tuber.</p>
<p>Smashed potatoes have been around for quite a while, but for us our exposure and love of smashed potatoes comes from some of our favorite ladies in the kitchen. <a title="Cristina Ferrare" href="http://cristinaferrarecooks.com/">Cristina Ferrare</a> fixed us up a batch for her cookbook we photographed, <a href="http://www.barnesandnoble.com/w/cristina-ferrares-big-bowl-of-love-cristina-ferrare/1100815327?ean=9781402786440&amp;itm=1&amp;usri=big%2bbowl%2bof%2blove&amp;workid=1029390985">A Big Bowl of Love</a>. Then made them again for the cover shoot party and somehow managed to stay gorgeous and camera ready for us while fixing up a feast for 25 people. That day it was a battle between Diane and <a href="http://devourtheworld.com/">Jen</a> <em>(who was so gracious to assist with the cover shoot)</em> over who could eat more of Cristina&#8217;s smashed potatoes. <p><strong>Garlic Chicken Spring Rolls Recipe</strong></p>
<p><em>Fresh basil, fresh mint or any herb will be a wonderful addition. For the crunch factor, you can add raw carrots, celery, bell peppers or cucumbers. In this recipe, I added pickled Vietnamese carrots and daikon that I always have on hand.<br />

<p>I know I&#8217;m not the only one who has gone through this, so I thought I&#8217;d finally say it publicly after 3 years of blogging.</p>
<p>Food blogging made me chunky-er, pleasantly plump or what ever you want to call it. My jeans didn&#8217;t zip anymore.</p>
<p>I&#8217;m not comfortable with the term &#8220;fat&#8221;. That F-word is so harsh and ugly. As true, blunt and effective it might be to get the point across that I need to get my ass on the tread mill, I don&#8217;t like &#8220;fat&#8221;.</p>
<p>I love chunky and pleasantly plump because it&#8217;s delicious sounding. These are yummy words to say how much I appreciate my foods and eating, but are fun and kind enough to tell me to get my ass in the gym. Nicely. Or in an exercise class. Politely. To get my ass off the blogging chair and start moving again. The daily reminder was that my jeans didn&#8217;t zip anymore.</p>

<strong>Peach and Heirloom Tomato Salad Recipe</strong>
<ul>
<li>2 ripe peaches, pitted, sliced</li>
<li>2 medium heirloom tomatoes</li>
<li>4 Tablespoons of Olive or grapeseed oil</li>
<li>1/2 teaspoon salt</li>
<li>2 tablespoons of lemon juice</li>
<li>3 teaspoons balsamic vinegar</li>
<li>1/2 teaspoon fresh or dried thyme</li>
<li>goat cheese</li>
</ul>
<p>1. In jar or medium bowl, combine vinaigrette ingredients well: oil, salt, lemon juice, balsamic vinegar and thyme.</p>
<p>2. On plate, assemble sliced peaches, tomatoes, crumbled goat cheese. Drizzle with vinaigrette on top. Serves 2 people.</p>

<p>Throughout the Summer we’re always staring at baskets full of heirloom tomatoes  and fresh fruit from the garden. This is definitely a good thing.  Not only do we get to be spoiled by the warm season’s bounty, but the garden possums, squirrels, and mockingbirds get to eat the fruit in full glory. Sharing is a good thing.</p>

<p style="text-align: left;"><strong>Heirloom Tomato Salad Recipe</strong></p>
<p style="text-align: left;">This recipe is so simple, it doesn&#8217;t really even need a write up!</p>
<p style="text-align: left;">Ingredients:</p>
<ul>
<li>fresh, sweet heirloom tomatoes</li>
<li>olive oil</li>
<li>balsamic vinegar</li>
<li>fresh basil</li>
<li>sea or kosher salt</li>
<li>fresh cracked black pepper</li>
</ul>
<p>1. Slice tomatoes and drizzle with olive oil, balsamic vinegar, salt and pepper. Slice or tear fresh basil leaves on top. Enjoy!</p>

<p style="text-align: justify;">This consistently cool weather had us apprehensive, particularly as heirloom tomato gardeners. With almost 20 heirloom tomatoes plants that we&#8217;ve been nurturing over the last few months, all we were hoping for was some hot sun to get these plants to bolt out with tomatoes. Unfortunately there hasn&#8217;t been much of the sun!</p>

<p style="text-align: justify;"><strong>Vietnamese Fried Egg Banh Mi Recipe (Banh Mi Trung Op La)- &#8220;The Bang Me&#8221;</strong><em><br />
Banh mi is all about the assembly and gathering all the components. Sometimes the cold cuts can be found at Vietnamese markets or you can make the meat fillings fresh. The bread is the most important factor, making sure it&#8217;s a light, crusty baguette to remain as close to a traditional Vietnamese Banh Mi as possible. </em></p>
