<p style="text-align: justify;"><em><strong>Vegetarian Chili Recipe with Roastes chiles<br /></strong></em><em>Beware! not all chilies are alike. Normally I use anaheim chiles, but their spice level varies. Proceed with caution and add the roasted chiles to your personal taste and spice level. </em><em>Also, when handling chiles, try to use gloves. </em></p>
<p style="text-align: justify;"><strong>Ingredients: </strong></p>

<li>1 medium anaheim chili</li>
<li>1 15 oz can of red beans, drained and rinsed</li>
<li>1 large carrot, small dice, about 1/2 cup</li>
<li>2 stalks celery, cleaned &#38; ends trimmed. Small dice, about 1/2 cup</li>
<li>1 red bell pepper, small dice, about 1 cup</li>
<li>1 small onion, minced, about 1 cup</li>

<p style="text-align: justify;">Memories from my vegetarian days were coming back and reminded me of my college years. In fact, my days of being vegetarian lasted till not long ago, 2008. For 19 years, I lived a meatless life where I nourished my days with vegetables, tofu, legumes and occasional dairy products. Then I stumbled upon what was called a &#8220;food blog&#8221; and I slowly started eating meat again, leaving behind my nearly two decades of eating meat free.</p>
<p style="text-align: justify;">I&#8217;ve been missing those vegetarian days, where I was often called a &#8220;veg head&#8221; by my circle of carnivores and herbivores. It never bothered me one bit when I was surrounded by meat and my choice back in college to start being a vegetarian wasn&#8217;t for political, social or religious reasons. I just didn&#8217;t like eating meat any more. Vegetables, legumes and whole grains satisfied me and nourished me completely. I was a happy eater and that was all that mattered.</p>

<p style="text-align: justify;">This has been an incredible week at the <span style="color: #993300;"><a href="http://steamykitchen.com/" target="_blank"><span style="color: #993300;">Steamy Kitchen</span></a></span> Compound/Resort/Farm/Retreat. Home. Diane and I red-eyed a flight across the country on Sunday night, arriving with the sunrise on Monday. Jaden is in the process of her next fantabulous cookbook and we came in for the week to help her power through a section of the photography. We rounded out the team with Jenna from <span style="color: #993300;"><a title="Eat Live Run Blog" href="http://www.eatliverun.com/" target="_blank"><span style="color: #993300;">Eat, Live, Run</span></a></span> to complete our shooting posse.<br /> This week flew by. Jenna and I prepped, seared, and sliced away in the kitchen while Diane and Jaden sistered up in Jaden&#8217;s studio to finish styling and shoot the recipes. The rhythm and efficiency of the team was astounding, if I do say so with pure humility. The first full day we cranked out 16 beautiful recipes and it seemed effortless. Each day, even after busting out a ton of recipes, we wound down by shaking up some cocktails, pouring glasses of wine and then we cooked some more. What is better than home cooked meals with people you love hanging out with?</p>

 <strong>Curry Chicken Wings Recipe</strong>
<ul>
<li>5 lbs Chicken Wings, tips trimmed, wings cut into 2 pieces</li>
<li>1/2 c Flour</li>
<li>1/4 c Curry Powder</li>
<li>14 oz Coconut Milk</li>
<li>3 T Curry Powder</li>
<li>3 T Honey</li>
<li>1 1/2 T Fish Sauce</li>
<li>1 1/2 T Chili Garlic Sauce</li>
</ul>
<p>Preheat oven 475°F. Line 2 baking sheets with foil and spray with oil to lightly coat.</p>

<li>Rinse and pat dry chicken wings.  Combine flour and 1/4 c curry powder in a large bowl. Toss chicken wings into flour/curry mix.</li>

<p>This past Summer we traveled to Texas to film <span style="color: #993300;"><a href="http://georgiapellegrini.com/" target="_blank"><span style="color: #993300;">Georgia Pellegrini&#8217;s</span></a></span> promo video for her new book, <span style="color: #993300;"><a href="http://www.amazon.com/Girl-Hunter-Revolutionizing-Hunt-Time/dp/0738214663" target="_blank"><span style="color: #993300;">Girl Hunter</span></a></span>. We were thrilled to be able to have the opportunity to work with Georgia. Have you heard of Georgia and her accomplishments or <span style="color: #993300;"><a href="http://georgiapellegrini.com/" target="_blank"><span style="color: #993300;">visited her site</span></a></span>? If not, you should, she is amazing.</p>
<p>Georgia graduated from Harvard and worked in finance at Lehman Brothers in New York City. But something drew her to food and so she left finance and entered culinary school at The French Culinary Institute in New York City, where she graduated at the top of her class. To top off it all off, she went on to work as a classically trained Chef at some of New York City&#8217;s finest restaurants and also in France. It&#8217;s jaw dropping to just read of her credentials, but the most important factor in all this is that Georgia is the sweetest, smartest, down to Earth person  you&#8217;ll ever meet.</p>

<strong>Brussels Sprouts Slaw with Bacon Recipe</strong>
<ul>
<li>1 lb Brussels Sprouts, sliced or shaved thin</li>
<li>1/2 t Celery Salt</li>
<li>1/2 cup Mayo</li>
<li>1 clove Garlic, minced</li>
<li>1 t Lemon Juice</li>
<li>zest of one Lemon</li>
<li>1 T Dijon Mustard</li>
<li>Sea Salt to taste</li>
<li>about 4 slices of fried Bacon, broken into small pieces</li>
<li>about 1/4 c toasted Pecans</li>
</ul>
<p>1. Wash and trim edges of brussels sprouts. Slice brussels sprouts very thin.</p>
<p>2. In large bowl, combine celery salt, mayo, garlic, lemon juice, lemon zest, dijon mustard and salt. Add shaved brussels sprouts and combine well.</p>

Hope you all had a wonderful Thanksgiving full of belly happy food that put you in a coma for a few hours. What&#8217;s a Thanksgiving without the typical surrender shout of &#8220;Omg, I ate too much I couldn&#8217;t help myself&#8221;? Normally every year we&#8217;ll indulge and look forward having a few days of extra left overs to nosh on. But this year we were so disciplined about how much we ate that we didn&#8217;t even have any left overs. Believe it or not, it&#8217;s true.</p>
<p>We spent our holiday up in San Francisco with family and had to drive back on Thanksgiving afternoon back to Los Angeles. So during our Thanksgiving brunch we were careful to not eat ourselves to the point of being comatose because of the impending 7 hour drive back home. We were so &#8220;good&#8221; about this that we didn&#8217;t even have any dessert. Now that&#8217;s what you call will power!</p>

<p> <strong>Curried Smashed Potatoes Recipe</strong><br /> <em>We like using fingerling potatoes the most for this recipe, but any small potato will work nicely (Baby Reds, Baby Yukons, etc.) Serves 4-6.</em></p>

Smashed Potatoes. Not mashed. Cooked whole, smashed to flatten and crack, then seared on a pan to crisp up. It is our favorite way to have a good potato, and that&#8217;s saying a lot considering how much comfort and love we have for the almighty tuber.</p>
<p>Smashed potatoes have been around for quite a while, but for us our exposure and love of smashed potatoes comes from some of our favorite ladies in the kitchen. <a title="Cristina Ferrare" href="http://cristinaferrarecooks.com/">Cristina Ferrare</a> fixed us up a batch for her cookbook we photographed, <a href="http://www.barnesandnoble.com/w/cristina-ferrares-big-bowl-of-love-cristina-ferrare/1100815327?ean=9781402786440&amp;itm=1&amp;usri=big%2bbowl%2bof%2blove&amp;workid=1029390985">A Big Bowl of Love</a>. Then made them again for the cover shoot party and somehow managed to stay gorgeous and camera ready for us while fixing up a feast for 25 people. That day it was a battle between Diane and <a href="http://devourtheworld.com/">Jen</a> <em>(who was so gracious to assist with the cover shoot)</em> over who could eat more of Cristina&#8217;s smashed potatoes. Sometimes a sweet treat is all it takes to boost the spirit. We know this well, the power of a great piece of candy to make us feel like a kid again. Normally, we don&#8217;t eat much candy but when fresh, homemade candy is put in front of us, we&#8217;re definitely ready to indulge.</p>

<strong>Roasted Delicata Squash w/ Rosemary</strong><br />
<em>Delicata squash has a wonderfully tender skin which can been eaten after roasting. Serves 4.</em>
<ul>
<li>2 Delicata Squash (@ 1lb each), sliced in 1/2&#8243; slices</li>
<li>1 T finely chopped fresh Rosemary</li>
<li>1 T Olive Oil</li>
<li>1 t Sea Salt</li>
<li>1/2 t fresh cracked Black Pepper</li>
</ul>
<p>Preheat oven to 400°F Roast</p>
<ol>
<li>Toss all ingredients on a sheet pan. Level the squash to be in a single layer. Roast in the oven for 30-35 minutes or until soft and slightly golden. Serve warm.</li>

Re-Awakened. That&#8217;s how I would describe the aftermath of traveling.</p>
<p>Even as aware as we try to be at home, it is easy to fall into our routines. We tend to focus on the familiar and filter out the rest. There is comfort and warmth in the familiar. However sometimes something exceptional is right under our noses and we never notice.</p>
<p>Yet when we travel, our senses are alive. Everything seems fresh and new. We seek out the different and exceptional. The heart and eyes are open at nearly every moment, ready for discovery. And after we get home from our travels, for a time, this sense of openly seeking stays with us, like the perfume of a beautiful woman just after she has left the room.</p>
