Sometimes a sweet treat is all it takes to boost the spirit. We know this well, the power of a great piece of candy to make us feel like a kid again. Normally, we don&#8217;t eat much candy but when fresh, homemade candy is put in front of us, we&#8217;re definitely ready to indulge.</p>

<p>I have a bit of an obsession lately. Actually, most of this whole year it is a topic frequently brought up between Diane and me. The culinary practice of charring. Pushing the cooking of something to it&#8217;s limit.</p>
<p>Go just a little too far, and the dish is ruined.  Game over. Hit the restart button and begin from scratch.</p>
<p>But when pushed to that limit, it develops an extra level of flavor and texture that only the daring can achieve. We find ourselves drawn to and falling in love with the places and cooks who are willing to take these risks.</p>

It may be surprising to see a lack of spices, but as Jennie mentions in her post, it allows for the &#8220;intense flavor of roasted apples&#8221; be highlighted. It happens to many of us this time of year. The air grows cool and crisp, Halloween is just around the corner, and the desire for autumn&#8217;s comforts fill our bones. And the top of the comfort list lies the glorious apple. I&#8217;ve got to get my apple mojo on.</p>
<p style="text-align: justify;">For me the apple craving began about a month ago. We had a shoot for one of Whole Foods local apple farmers. Few things compare to picking apples fresh off the tree and biting into that sweet crispness, tinged with touch of tartness.</p>
<p style="text-align: justify;">Every time I pick an apple from a tree it brings me back to my childhood and our three apples trees growing by the house on the ranch. We&#8217;d pick and eat until our bellies were full. The sweet smell of the apples filling the autumn air. It&#8217;s not Sierra, and I&#8217;m not talking about the neighborhood possums. I tend to think of us as living near them, not with them. No. I&#8217;m talking about the adorable and deceptively innocent looking Diane.</p>
<p>Take a road-trip with her and you&#8217;ll see what I mean. On a quiet little drive through the countryside and happen to pass an ripe apple tree growing alongside the road, the car will be stopping. Then I will pry the fingernails off my thigh which caused the abrupt interruption, we will look around for witnesses, then climb through ditch and weeds to pluck the forbidden fruit.</p>

<p>We are always searching for our next Bonnie and Clyde ice cream and cookie pairing. Sometimes we get a Bonnie and Hank, or a Clyde and Juliet. The are nice. Nothing you would talk bad about. However their pairing is nothing to capture the imagination and fascination of the palate.</p>

<p><strong>Persimmon Cookies Recipe</strong><br />
 <em>These are a gloriously soft, moist cookie.  This recipe is as written from my grandmother&#8217;s recipe card, with the mere addition of grams added for ease in measurement.   Cranberries would be an excellent substitute for the raisins and chocolate chips are another great addition, both requests from Mom. She passed this on to me with the side note: &#8221; ****** from my mom&#8217;s very old recipe box****** &#8220;.  The batter would likely make excellent muffins or as a cake layer. Dough freezes well.  Total Prep and Cooking Time: 30 min   Makes about 36 cookies. </em></p>

At least in it&#8217;s normal solid state.  Marshmallows in the big colorful boxes of sugar, I mean cereal&#8230; Pass the cheerios, please. Rocky Road ice cream&#8230; Meh.   But marshmallows which had been made molten under the flame or from bathing in mug hot chocolate, those made me giddy.</p>
