Garlic Chicken Spring Rolls Recipe

Fresh basil, fresh mint or any herb will be a wonderful addition. For the crunch factor, you can add raw carrots, celery, bell peppers or cucumbers. In this recipe, I added pickled Vietnamese carrots and daikon that I always have on hand.

I know I’m not the only one who has gone through this, so I thought I’d finally say it publicly after 3 years of blogging.

Food blogging made me chunky-er, pleasantly plump or what ever you want to call it. My jeans didn’t zip anymore.

I’m not comfortable with the term “fat”. That F-word is so harsh and ugly. As true, blunt and effective it might be to get the point across that I need to get my ass on the tread mill, I don’t like “fat”.

I love chunky and pleasantly plump because it’s delicious sounding. These are yummy words to say how much I appreciate my foods and eating, but are fun and kind enough to tell me to get my ass in the gym. Nicely. Or in an exercise class. Politely. To get my ass off the blogging chair and start moving again. The daily reminder was that my jeans didn’t zip anymore.

Grilled Artichokes and Stems with Garlic Tarragon Butter
The quality of the artichokes you are able to get will vary time it takes to cook them. Older artichokes are usually tougher and require longer cook times. Cook by feel and testing, rather than times. For this recipe, first you boil them to mostly cook the artichokes, then marinate them, then finish by grilling to give them an extra special “smokey” quality. When boiling, you’ll want the artichokes nearly all the way cooked, as they won’t cook much more on the grill. The step is more for the smokey flavor.
Three cheers for chicken wings or in our case, 3 recipes. Neither of us were prepared to be such gluttons one afternoon when we made a batch of sriracha buffalo wings. It all started with a good sauce, then ideas started to churn in our heads about more options with some of our other sauce recipes. Things got a little carried away in the kitchen, so hopefully you’re ready for more chicken wing recipes this week!

Buffalo wings are fairly hard to pass up at a party, unless you’re a vegetarian. And if that’s the case, there’s always a platter of crispy celery and carrots with the bonus buffalo wing sauce for our veg-head friends. So everyone wins at our parties.

A memorable buffalo or chicken wing recipe is all about having a great sauce, one that will keep people licking their fingers between every touchdown hoorah. Adding a bit of heat and lively spice doesn’t hurt either and if your guests leave the party with their palates till tingling, then you know you have a winning recipe.

The salad can be especially pleasing with different textures and flavors ranging from fried shallots, roasted peanuts, fried garlic and picked onions to different Vietnamese herbs such as mint, basil or the classic rau ram (Viet coriander).
BBQ Chicken & Fresh Corn Pizza Recipe
Summer Fest is in full swing and the theme for this week is corn, lovely sweet corn.
As a kid, I wasn’t particularly picky, but I had my likes and dislikes. We were lucky to grow up in a farming valley and during summertime there were the little farm stands filled with amazing freshly picked fruits and vegetables, not to mention ours and our neighbors’ gardens. There were tastes of perfect fruit sweetness and textures of faultless crops which I will never forget. Sugar snaps picked straight from the vine. Raspberries gently slid from their dangling vine tips, carefully picked amongst the thorns. Walla Walla sweet onions straight from gentle hills and valleys of Walla Walla. The sweet, chin dripping goodness of Hermiston watermelons, seeds spat as far as the lungs could push. And fresh corn snapped from its elephant-eye high perch.
