 <strong>Curry Chicken Wings Recipe</strong>
<ul>
<li>5 lbs Chicken Wings, tips trimmed, wings cut into 2 pieces</li>
<li>1/2 c Flour</li>
<li>1/4 c Curry Powder</li>
<li>14 oz Coconut Milk</li>
<li>3 T Curry Powder</li>
<li>3 T Honey</li>
<li>1 1/2 T Fish Sauce</li>
<li>1 1/2 T Chili Garlic Sauce</li>
</ul>
<p>Preheat oven 475°F. Line 2 baking sheets with foil and spray with oil to lightly coat.</p>

<li>Rinse and pat dry chicken wings.  Combine flour and 1/4 c curry powder in a large bowl. Toss chicken wings into flour/curry mix.</li>

With all of this thrown on top of everyday life, as the cooks in our clans it isn&#8217;t surprising most of us feel like we just got <a href="http://www.urbandictionary.com/define.php?term=Gronked">Gronked</a>.</p>
<p>Yet most of us wouldn&#8217;t trade it for the world. For some, cooking in the kitchen is a chore, yet for most of us, it is one of the best places in the world. A place where we pour our hearts and souls into the food to bring a smile to those we love.</p>

<p><strong>Garlic Chicken Spring Rolls Recipe</strong></p>
<p><em>Fresh basil, fresh mint or any herb will be a wonderful addition. For the crunch factor, you can add raw carrots, celery, bell peppers or cucumbers. In this recipe, I added pickled Vietnamese carrots and daikon that I always have on hand.<br />

<p><strong>Ingredients:</strong></p>
<ul>
<li>2 pounds of boneless chicken</li>
<li>4 Tablespoons of grape seed or vegetable oil</li>
<li>2 medium cloves of garlic, minced</li>
<li>2 teaspoons of sesame oil</li>
<li>4 teaspoons soy sauce or fish sauce</li>
<li>fresh basil, mint or other herbs</li>
<li>fresh lettuce, chopped or torn in small pieces</li>

<p>I know I&#8217;m not the only one who has gone through this, so I thought I&#8217;d finally say it publicly after 3 years of blogging.</p>
<p>Food blogging made me chunky-er, pleasantly plump or what ever you want to call it. My jeans didn&#8217;t zip anymore.</p>
<p>I&#8217;m not comfortable with the term &#8220;fat&#8221;. That F-word is so harsh and ugly. As true, blunt and effective it might be to get the point across that I need to get my ass on the tread mill, I don&#8217;t like &#8220;fat&#8221;.</p>
<p>I love chunky and pleasantly plump because it&#8217;s delicious sounding. These are yummy words to say how much I appreciate my foods and eating, but are fun and kind enough to tell me to get my ass in the gym. Nicely. Or in an exercise class. Politely. To get my ass off the blogging chair and start moving again. The daily reminder was that my jeans didn&#8217;t zip anymore.</p>

<p style="text-align: justify;"><strong>Vietnamese Fried Egg Banh Mi Recipe (Banh Mi Trung Op La)- &#8220;The Bang Me&#8221;</strong><em><br />
Banh mi is all about the assembly and gathering all the components. Sometimes the cold cuts can be found at Vietnamese markets or you can make the meat fillings fresh. The bread is the most important factor, making sure it&#8217;s a light, crusty baguette to remain as close to a traditional Vietnamese Banh Mi as possible. </em></p>

<em>I&#8217;ve added fresh basil to these spring rolls for an added freshness, but if you don&#8217;t have basil, fresh mint or any herb will be a wonderful addition. We&#8217;ve paired it with a sesame-soy dipping sauce. Depending on the saltiness of your bacon and your soy sauce, you may want to thin out the soy sauce with some water to cut back on the saltiness.</em></p>

A little goes a long way, so if you can find a bottle, it it well worth the purchase. <p><strong>Buddhas Hand Vinaigrette for Salads<br />
</strong>This versatile dressing can be used in any of your salads. For this salad, we just tossed together some fresh arugula and proscuitto.</p>
<ul>
<li>4 Tablespoons olive or grapeseed oil</li>
<li>1/2 teaspoon salt</li>
<li>2 Tablespoons lemon juice</li>
<li>2 Tablespoons Buddahs hand zest</li>
<li>3 teaspoons balsamic vinegar</li>
<li>1/2 teaspoon fresh or dried thyme, minced</li>
<li>1 clove minced garlic</li>
</ul>
<p>1.  Combine all vinaigrette together in bowl or jar. Mix or shake well. For best results, allow vinaigrette to marinade overnight.</p>
<p>2. Dress vinaigrette over your favorite salad greens.</p>

<p><strong>Red Rice &#38; Mint w/ Soy Dressing</strong><br />
<em>Because of the  tougher, but healthy, outer mesocarp of red rice, you need to use more  water than most white rice grains. The rice can be cooked in a heavy  sauce pan, but if you can a rice cooker, even better. The rice cooker  will cook the red rice a little more evenly, but you can achieve the  same result by stirring the grains more often for the stove top method.</em></p>

<p>We&#8217;ve been up to our elbows lately with some new projects and late at the end of the day, nothing makes us happier than a big bowl of comfort food and a cocktail. Or two. Comfort food, regardless of how many devilish calories lurk in all the starch, always manages to calm our nerves and satisfy our appetites.</p>
<p>A bowl of<a href="http://www.wisegeek.com/what-is-red-rice.htm" target="_blank"> red rice</a> is certainly one of our favorite comfort foods and this recipe is updated from our January 2008 archives, with a few new additions. A chewy  and nutty grain variety, red rice is not only satisfying to eat, it&#8217;s loved by many for being exceptionally healthy.</p>
<p>Have you ever had red rice before? If not, you need to get yourself a bag, especially if you&#8217;re a fan of brown or any type of wild rice. It&#8217;s one of our favorites, so full of flavor, chewy bite and nutritionally packed with vitamins. This whole grain is always a win-win on our table.</p>

<p style="text-align: justify;"><strong>Sweet Pea Pot Stickers Recipe<br />
</strong><em>Adapted from </em><em>101cookbooks.com</em><em>. Heidi gives detailed instructions in her original entry for</em><em> how to make the dumplings</em><em>. Jaden from </em><em>Steamykitchen</em><em> </em><em>also has a great tutorial for </em><em>how to pleat pot sticker dumplings</em><em>.</em><em> Please reference Heidi and Jaden&#8217;s entries for the perfect dumpling dips.<br />
Baking these pot stickers make them less greasy and much healthier, resulting in a crispy, chewy texture. Makes about 3-4 dozen pot stickers.</em></p>
